Nói chung bánh xèo, bánh khọt miền Nam giờ hầu hết là bị ‘biến tướng’, chiên ngập dầu chứ không còn là một miếng mỡ heo chà chà trên chảo nóng cho dính một lớp mỡ mỏng rồi đổ bột lên như xưa. Có nơi bánh đang chiên thì lại múc một vá dầu rưới thêm lên trên. Cái bánh xèo, bánh khọt mang ra chỉ cần ngắt một miếng nhỏ bóp lại là dầu nhỏ ra như trời mưa dột. Có nơi còn dùng dầu ‘tái chế’, đục nhờ nhờ chứ không được trong như dầu mới, quan sát kỹ sẽ thấy. Lâu lâu thèm đi ăn một lần thì chắc không sao, ăn nhiều thì…bệnh tòng khẩu nhập, ‘phì’ tòng khẩu nhập🤪🤪🤪

Hey Max, I can grow all of the 6 veggies in Brisbane, Australia as the climate here can be similar to Saigon in Summer. My Mum used to make bánh khọt about 10 years ago, and she would chop the prawns into small pieces as I think it's the the Can Tho style which was where we grew up . I have forgotten about this dish until your video jotted my memory of it, thank you!😄. I'm gonna try and make this dish and see if it turns out like my Mum's. At least I have all the herbs to accompany this dish. Love watching your videos and hear you speak Vietnamese - keep it up!

You're right Max! To compare it to Korean bbq is to do a disservice to the way Vietnamese food has been eaten like this since forever. We wrap many more foods in rice ppaper and lettuce than bbq.

Pretty sure the Koreans got their idea from the Viets...since wrapping our foods in greens and herbs is a big part of our eating culture. From fried spring rolls to banh tom, to banh xeo, to eating the humble meals at home.

Agreed, the abundance of fresh luscious salad you get with these dishes can't be replicated out of vietnam. you can eat banh xeo and banh khot out of vietnam just to kind of satisfy your taste buds but that fresh bite you get in combination with the salads from vietnam makes the dish x100 better.

Húng cây is mint (not basil) Rau thơm is peppermint Lá quế is thai basil Tía tô is perilla Dấp cá is commonly known as fish mint Bánh khọt "khawt" is named because you usually eat it piping hot and then your throat would burn and you would make that throaty gurgle sound "khawt" to clear the hot cake from your throat... Bánh xèo is aptly named because of the sizzling sound it makes while frying Both of these are southern version since they have mung beans, whereas the central version would not have it :-)

Fish mint, Max. Nasty stuff! But then you love mam tom, so figures. LOL! Oft times the banh xeo in HCMC doesn't contain mung beans so I was surprised to see him toss some in there as that's how I grew up eating it (but my mom used flavored ground pork and no shrimp...probably poor people's version, which explains the mung beans for filler). I'm with you on banh khot that has a bit of not quite cooked dough in the middle as some of the ones I've seen out from Saigon are like mini banh xeo, which to me, I think what is the point? I grew up eating it where it's softer in texture and has slightly cooked, jiggly middle as well (but again, the version I ate also used flavored ground pork, not shrimp).

I agree with a couple others below that the Koreans likely got their idea of wrapping their BBQ in veggies from the Viets...I question if they even really eat fresh veggies like that prior. LOL! Whereas in Viet food culture, pretty much everything can be wrapped or eaten with tons of veggies/herbs...it's entrenched in our culture...no other does fresh veggies/herbs like Viets do.

If any of you reading this try these foods, always take a taste plain and THEN try it all wrapped up like they are eating it and you will be SHOCKED!! It's a new level. Max, when you get back to the US, you should try bánh xèo here in San Jose at Bánh xèo ngon restaurant. Then you can compare between banh xèo made in VN and bánh xèo made in the US which one is better. In San Jose, the restaurant has more varieties, Beef, pork and seafood.

Have you ever tried fruits dipped in fish sauce and sugar? you should try her xoài lắc. She's next to the hotpot(?) restaurant (right next to the hong tra tac store). Yep, pretty much any cuisine that wraps their food in lettuce/greens and herbs is a copy of Viet food. So much Vietnamese food is eaten that way...highly doubt the Koreans were eating fresh veggies/herbs like Viets. We eat our fried spring rolls like that, as well as banh tom, etc....a lot of humble daily meals are eaten in a similar fashion.

Nhiều nhà hàng vn bán bánh xèo cho thực khách nước ngoài thường kèm theo bánh tráng để cuốn bên ngoài rau khỏi bị rớt nhân bên trong. Cá nhân m cảm thấy ăn cách của Max là chuẩn nhất với cách ăn bánh xèo của ng miền Tây( miền Nam nói chung). Khi có bánh tráng vào cuốn bánh sẽ rất dai, khó cắn và mất sự hài hoà giữa vị rau, bánh và nước chấm. Người miền Tây khi thưởng thức bánh xèo còn kết hợp rất nhiều loại rau ngon lạ khác( lá cách, Đinh lăng, lá lốt...), và vị của cải xà lách ngọt sẽ ko ngon bằng loại cải xanh( răng cưa có chút vị đắng). Người miền Tây còn biến tấu bánh xèo bằng nhân Hải sản, đặc biệt là bánh xèo thịt vịt bầm nhuyễn và củ hủ dừa làm nhân ngon ko lẫn vào đâu được. Đó là chút chia sẻ riêng về nét văn hóa của ng con miền Tây như mình.
