Maddy our oldest is in Washington and he asked me the same thing. He copied all my marinade recipes and then puts say chicken breasts cut into cutlets in freezer bags with some marinade. He packages them in two servings size. He does this with beef, pork etc. He also makes a big salad every 3 days. In the morning before he leaves the house he pulls whatever protein he wants to eat out of the freezer and puts it in the frig so he can grill it when he gets home. He makes enough to take a lunch the next day. On the weekends he cooks things he is hungry for like chili and any leftovers he freezes in individual portions. He always has fruit on hand. He said it is working well for him with little effort. I bought him a food saver and he said that really helps. :D Shelby

Those are great ideas! Thank you! An issue I run into a lot is buying produce & not being able to use it before it goes bad! I try to buy less, but then I feel like I don't have enough variety. I try to find recipes that are different, but use similar ingredients so I don't have to have a ton of different ingredients on hand that may not be used, but that's definitely hard to do for me.

In that regard it is easier to cook for a large family. I just had a thought, does your grocery store have a salad bar section? Maybe buy just a spoonful of different items from the salad bar so you could add to your salads. I'm just trying to think out loud for solutions. Hmmm Shelby I'm going to keep thinking, it takes me awhile LOL

You can do philly cheesesteak sliders too with minute steak, peppers, onions and provolone too. I make those often for work. I brush the buns with compound garlic butter and a lil asiago cheese.

I'm curious on when u start making dinner? I do work full time so I cant start too early. Just wondering about ur start and end time. Also, I have no skill in timing foods so nothing ever comes together at the right time and we are left waiting too long on an item. Any hints on ur process would be great!

That is an excellent question, in fact I just got off the phone with our oldest son and he asked the same question. Great minds must think a like. I told him I would make some videos on different marinades, so he can freeze a few packets at a time and de frost as needed. He has free time on the weekend to meal prep. So I am working on some videos that may interest both of you, that way all you have to do is grill and serve with a salad or veggies. Easy peasy. Shelby

Hi Lisa, Still in the planning stage. I'm so impatient. Ken has decided to put the trout pond in, so he wants that done first. The crew will be back in a couple of weeks to do the garage build, and lay the concrete. I think Ken said that is when they are doing the pond? I can't wait!! Shelby

Yes Christine it is such a Blessing, and I am very thankful. But we have had our share of tough times too. There was one month that we only had 17 dollars until the next payday for food, and we made homemade bean tostados. After a few days the lettuce, cheese, tomato, sour cream and avocado was gone. All we had was beans and corn tortillas....after that I started building my pantry and tried to learn how to cook from scratch. That was 30 years ago.......now I look back and think they were the best bean tostados ever. Funny how ones perspective changes over time. :D Shelby
