I've been meal prepping for two for a couple of months now. I'm not consistent. It usually consists of me prepping a big Sunday dinner and prepping Mondays dinner. That gives us leftovers and work lunches till Wednesday. I try to pull meat to defrost on Tuesday, which gives us a choice of a fresh meal or leftovers on Thursdays. Bit because of our work schedule we usually eat out twice a week. Trying to reduce food waste. Helps a lot. Thanks for the tips.

I also saute a chopped onion in olive oil first, hit it with red wine, cook off alcohol and then add tomatoes, garlic, seasoning. If you buy real Parmeggiano, save the rinds in your freezer and pop rind in sauce while it simmers. you can can it (with lemon juice as an acid) and also freeze it. We love tossing several links of Italian sausage in the bubbling sauce, too.

Okay so I am, by choice, but praying for forgiveness, gonna say it! I have had food poisoning before and the 1st time from a Sun Drop. So my point is that too many, too many people worry about food going bad and folks getting sick, it just is not all that! In my 52 years I practice what my mama taught me and what I have learned from watching. Leftovers and thawing on the counter has been my thing and I don't have a problem, Just me and mine. To each their own. It all looks yummy! I spent Friday cooking a pork, rice, and cabbage dish for the freezer plus extra containers of cabbage boiled in chicken broth, yummy. So far today I have a creamy cheesy chicken casserole made and will package when cooked and this is for supper. Also made cornbread, boiled a whole chicken for the broth with onions, celery salt and pepper and gonna mix up chicken and dressing for dinner tomorrow and the freezer. Also gonna take some of the chicken and use for chicken, salsa and cheese quesadillas for lunch tomorrow. I am tired but trying to empty one small upright freezer, fill my medium chest one with prepared meals and I am either gonna sell the little one or just hang on to it, cause.a never know! Blessings y'all!!
