You can easily swap out the eggs in bananabread for applesauce. Per egg you just use 60-80 grams of applesauce, depending on the size of eggs that you would usually use. Tastes exactly the same :)

I just did a fridge clean out dinner tonight. I threw rice in the instant pot. Then I sauted onion, mushrooms, zucchini, snap peas, and garlic. When the rice was done I stored that in and seasoned with soy sauce. I topped it with green onions, sesame oil, and sesame seeds. I don't often do meat free meals (and it wasn't totally vegan because I did the rice in the chicken broth that was also left over in my fridge), but it worked for using up a bunch of veg I had laying around. Woot!

We actually do this challenge the first week of every month. We found that to be the best way to make sure we are using up food and also savings on our food budget. Honestly some of our favorite meals were birth from this monthly challenge. My husband always comments that we seem to have more variety in our meals that week. Necessity is the mother of invention! 😆

Right off the bat I came up with a ton of meal ideas. And I’m plant based. But using what you showed in fridge and pantry. Cheesey rice casserole with sausages, pulled pork over rice, sausages and waffles, cheesey grits, ravioli with sausage, stir fry veggies over rice, vegetable soup with rice and tomatoes stewed, oatmeal banana muffins or cookies, granola with the dried oatmeal, energy balls with oats, so many ideas

They make free printables...but I Learned recently a tip.. Make "half and X" on your paper for each thing... complete the x when you use each thing! I was forever scratching out my tallies and it never worked for me! This is much better

I love freezer/pantry clean-out posts! I managed to use up a lot of stuff that was about to expire/had expired, as well as stuff that's been in the freezer a long time. It's a balancing act these days because I don't feel secure without a month's worth of groceries on hand, but I also spend too much of my budget on food, even though I rarely buy junk/processed stuff. I started a garden and dream of homesteading.

Another banana thing... frozen bananas make a fantastic ice cream treat in a blender or food processor and you can add berries or chocolate for a boost. There’s a German guy here on YT who whizzes up these things all the time, they look incredible. I find myself eating my frozen bananas out of a baggy before the appliance part, but it’s just me and the dog here so less need for a wow factor.

Just catching up on your channel, love it!!! Your freezer clean-out/use-it-up challenges are so authentic because you don't seem to have a 'prepper' approach to the freezer/pantry stock. When you are 'using it up' you are really cleaning that fridge/freezer out!

I sub cornstarch for an egg occasionally when I'm trying to stretch my ingredients. It works for me in banana bread and cornbread. The general ratio for this cornstarch + water vegan egg substitute is 1 tablespoon of cornstarch (potato starch works too), whisked together with 3 tablespoons of warm water. I've seen some resources call for a 1:2 ratio as well, but I've tried and had more success with the 1:3 ratio.

At around the 7 min mark I heard my boys growling or something. Turned around and they were perfectly calm. Heard it again, turned around, they were calm, began to think I was crazy. I've managed to make it three weeks into April with 'only' spending $226 on groceries/toiletries so far. It felt good to use stuff up from freezer/pantry, and I still have 8-10 days worth of 3-squares/snacks left. I'm terrible at not running to the store constantly but working on it.

If you want the best ever salmon recipe, brown your butter (1TBPS per fillet) first then pan sear with salt and pepper on the first side for 5-7 minutes then flip and squeeze lemon juice over it and cook another 5-7 minutes or until it’s cooked through. It’s my absolute favorite way to eat salmon! I’ve tried tons of different sauces and recipes but turns out that simple is best. The browned butter is what makes this one a game changer!

I tend to struggle with how much to cook. With 5 people in our house, some days I need both bags of ravioli. Other days I need 1. You never know. Too much food means leftovers which is good. Too little of a dish and I am scrambling around trying to stretch the meal.

That use it up pasta is something I made last week, but I put the pasta in the sauce and just baked it. I added cheese on top to let it get melted but the way you did it economize son cheese and calories. I will try that.

Glaze the salmon with BBQ sauce and bake it for 22-24 mins at 350F - it's amazing!! and 1 tbsp of BBQ sauce is like 10-20 cals, so very healthy!

I like salmon but I have found that no matter how many ways I try to cook sockeye salmon (what I saw you have), I don't like it. It's completely different to me. I find the norwegian salmon is much more foolproof and tastes good with doing barely anything to it.

YUM!! That pasta looked really good. I have some sausage in the fridge right now and I think that I have all those ingredients on hand. I just might have to make that soon. I just went through the freezer and pantries which I do around the 20th of every month to plan for next months meal plan to use up things that we have around. We need to submit a list of the weird things that we have in our pantry that you can give us feedback for. LOL!! I know that I have a few things that I have to throw out because I haven't used and it is taking up room.
