I use a sliding blade box-cutter/craft-knife for scoring skin. You can 'set' the depth of the cut very easily

I’m making pork belly #1 right now. I can not wait. My knife needs a good sharpening so fingers crossed! Instead of oil, I used bacon fat. 😂
