@Beefaroni_Bert grandparents on my dad's side were from Sicily. Cheese was used on a ton of food, even some of the ones people say you can't. We didn't eat meatballs or other meat on Sundays with macaroni or spaghetti, since that's an American thing. Garlic bread was toasted bread with olive oil and you took a clove after toasting the bread and smudged it on the bread. She called it Sunday gravy and people with the cheese rules call it marinara. That doesn't exist in Italy at all, it meant seafood sauce to her. Because it meant marina the ocean to her and other relatives. They had no clue what Alfredo sauce was since it came from a single restaurant in Rome. 1st time we heard about it was in the late '80s after a Chef in California made it with cream over starchy pasta water. I got a job at a catering hall and they served Italian wedding soup for a wedding a friend who was also Italian never heard of. We called it Chicken escarole or chicken pastina with spinach.

I'm 7 minuets into this. I see carefully trimmed big meat. Then all sides are seared before roasting. ????? Wait..Then I realized.
