The "filling" appears to be chopped fennel tops, thai basil, very roughly chopped garlic and chopped red onion. However, at 1:03, something goes in that I don't know. Looks cured/fermented something. Anyone know what it is? Also, there is no way to know what goes into that sauce cup without tasting it. There are seveal steps left out of this video. After filling and trussing, the meat is clearly baked or steamed to cook it through, then maybe cooled and further dried. The final high-temp roasting is to puff up the fat. It is even a classic technique in Puerto Rican pork roast to get the 'chicharones'. This technique leads to a very tender pork, highly flavored, plus the crispy crunch of fried pork rinds. There is no wonder it is amazing.

He should switch the top and bottom trays when he rotates them mid-roast. The bottom tray gets better even crispy skin across all four rolls than the top tray. And that sandwich... it looks amazing, but imagine trying to take those little slices out of that container? It'll fall apart, especially after all the juices soak into the bottom slice of bread. He should just wrap it in parchment paper and slice it once down the middle. Otherwise, the food itself looks so delicious.

I just don't know why they'd waste all those juices. Literally BOTH the fat and the pork juices themselves would be useful in a kitchen, since you could make an amazing stock or broth, and use the fat to confit another dish. Seems like a weird choice to just pour it down the drain :/ His food looks delicious though, and maybe he just doesn't want the hassle of keeping it, sorting, and storing it afterwards.
