[蛋糕卷]肉鬆蛋糕卷(正卷)|好用刀子分享|鹹味蛋糕卷|肉鬆瑞士卷食譜|Meat Floss Roll Cake Recipe| Meat Floss Swiss Roll Cake| Japanese Roll Cake Recipe 蛋糕體材料: - 蛋白 160g - 蛋黃 78g - 砂糖 50g - 植物油 35g - 低筋麵粉 50g - 牛奶 52g 表面: - 香蔥碎 適量 - 肉鬆 適量 內餡: - 沙律醬/美奶滋 適量 - 肉鬆 適量 - 紫菜碎 適量 Chiffon Cake: - egg white 160g - egg yolk 78g - granulated sugar 50g - vegetable oil 35g - cake flour 50g - milk 52g Topping: - meat floss - chopped spring onion Filling: - Mayonnaise - meat floss - seasoned seaweed 做法: 1.分開蛋白和蛋黃, 稱出所需份量, 把蛋白倒入無油乾淨的攪拌碗內 , 放入冰箱冷凍15~20分鐘 2.為烤盤墊一塊油紙/油布/硅膠墊 3.把低筋麵粉過篩 4.把蛋黃倒入大碗內 ,攪拌至蛋黃顏色微微變淺 5.加入植物油, 攪拌均勻 6.先加入一半的牛奶 , 攪拌均勻 7.加入己過篩的低筋麵粉 , 攪拌至順滑 8.加入剩下的牛奶 ,攪拌均勻, 放一邊備用 9. 取出冰好的蛋白 (冰至盆邊有一層薄冰就可以了 ), 開動電動打蛋器以中速打發 10.分三次加入砂糖 , 打發至提起打蛋頭出現有彈性的小彎勾, 濕性發泡狀態 11.把3分1的蛋白霜加入蛋黃糊中 , 略拌勻 12.再加入3分1, 略拌勻 13.把全部蛋黃糊倒回蛋白霜中 , 先用手動打蛋器攪拌均勻 , 最後用刮刀徹底翻拌均勻 14.把蛋糕糊倒入烤盤內 ,搖勻 , 用刮板刮平 , 摔一下, 震出大氣泡 15.撒上香蔥碎和肉鬆 16.已預熱的烤箱:170°C, 中層, 22~25分鐘 17.出爐蓋上一塊較長的烘焙紙 , 蓋上冷卻網, 然後反轉 18.撕開底紙, 蓋回去, 再反轉 , 表面朝上冷卻 19.冷卻至微溫時, 在蛋糕面蓋回那張長的烘焙紙, 反轉, 去掉底紙, 蛋糕尾端斜切約1CM 20.抹上美奶滋, 均勻地鋪上肉鬆和紫菜碎 21.用麵棍卷起近自己一邊的烘焙紙, 提起烘焙紙, 向前壓一下 , 用手指固定蛋糕片, 順勢卷起, 把烘焙紙攝入蛋糕卷底部, 卷緊 , 放入冰箱冷藏30~60分鐘定形 22. 取出定形好的蛋糕卷 , 撕去烘焙紙 , 切件即可享用 筆記: -表面的肉鬆和香蔥碎不要太多, 太多卷時易裂; 肉鬆太大顆要捏碎 -蛋糕片收口塗上美奶滋, 卷好的蛋糕卷才不容易散開 -這個蛋糕出爐後不要摔,不要摔, 不要摔! -局部鼓包是因為底火太高 -表皮被黏掉因為表皮沒烤乾 -蛋白霜打到小彎勾, 濕性發泡就夠了, 打太發會開裂 -微溫時卷不容易開裂 -冰過的蛋白比較難打發, 全程只用中速, 所以打發時間較長, 我都打10分鐘以上, 但是耐心一點慢慢把發白霜打發好, 花多一點時間是值得的, 因為這樣打發的蛋白霜會更穩定, 不易消泡, 蛋白霜更細緻, 成品口感更好 -掀起底紙, 再蓋回去 , 因為如果使用烘焙紙墊底, 出爐不掀起底紙冷卻, 冷卻時表面會皺 -做正卷一定要表面朝上冷卻, 壓在底部表皮會被黏掉 (暫時想到這麼多, 想到了再補充) ------------------------------------------------------------------------------------------------------------- [蛋糕卷]原味戚風蛋糕卷(正卷)|基礎蛋糕卷|生乳卷|瑞士卷食譜|Chiffon Roll Cake Recipe| Perfect Swiss Roll Cake| Japanese Roll Cake Recipe kzbin.info/www/bejne/eJ_Mm5ycpZ6sqZI ------------------------------------------------------------------------------------------------------------- facebook facebook.com/Yummy-Yummy-... instagram instagram.com/0yummy.yummy0/ ------------------------------------------------------------------------------------------------ artlist.io/ License Number 436317

@@yummyyummy2549 yeayyyyyy.... Mmm let me choose... maybe you can make recipes for types of dimsum like part I shumay.. Part II char siu bao Part III mantao or maybe part IV springroll in Indonesia thats called lunpia... maybe it's a good idea to be featured on your KZbin channel..
