Cooked up a moose tongue this way this weekend. Used a pressure cooker to speed up the process. Had a half dozen squeemish people change their minds about tongue including myself. Thanks for recipe and great video. The visual component to this dish is a big part of its success.

Steve cares about getting us to eat all the weird bits just as much as he cares about conservation. I'm into it. I'll try this next year.
@gottabweird5 жыл бұрын
I think they somewhat go hand in hand. Out of respect for the animal, you conserve the land it lives on and you try to use as much of it as possible when you kill it for the table.

I'll give this a try with moose calf tongue. Horseradish is my usual condiment, here in Alberta its abundant along river banks. Butter fried liver and lungs, sprinkle with chopped garlic and parsley give that a wirl. Rarely do i see people eat lungs(in some parts of Europe its known as "white liver"). Every bit as delicious as actual liver. Cheers

I have gained a lot of respect for guys who hunt properly by watching your shows. You should try an Iranian dish called Kalle Pache. You boil sheep head on medium heat for 4-6 hours. Turmeric, salt, a dash of cinnamon, onions and garlic. You can eat the meat on the face, the eye balls (remove the black of the eye), tongue and the brain, with some lemon juice sprinkled on top. The water is also delicious.

When we make cow tongue we prep it like were doing cow cheek in barbacoa. Easiest way it to wrap it on foil put it the crock pot for how ever long it takes to cook. And the skin comes rite off. Then season with salt to taste Then dice onions and cilantro throw it in a corn tortilla with some good salsa and enjoy

Excellent! I have 2 moose tongues from this past fall up here in Alaska. Question: Why not pop tongue into a crock pot instead of braising?
@vitaly63123 жыл бұрын
Hello! First off, cool videos and cool dog! We do some training here as well (not for retrieving). I appreciate people who put in time for their dogs! To answer your question, she isn’t necessarily braising, she’s boiling the tongue which serves a few purposes, the first one is getting the outer skin off which is very tough! The second is that it cooks the tongue through. Most people these days will put a secondary cook (like she did sautéing the tongue or searing it) but some people don’t and will just slice it thin like a deli meat for sandwiches or salads or something. The way my family eats it is simply cut thin with some Russian hot mustard or hot horseradish. Preferably served with dark rye bread. I’m assuming you can probably slow cook or but I don’t think there’s a point? I’m not sure that you’ll ever get like a “pulled tongue” texture out of it and it’ll just slow down the process. I have heard of people pressure cooking it for 30 minutes (I assume a moose tongue would be an hour due to its size) to peel and cook it through but haven’t done it yet (doing it for thanksgiving so maybe I’ll backtrack to this video later). It also freezes very well as long as you have vacuum sealed bags. So after you cook the tongue you can slice off a part of it, vac seal it and save it for another time although I probably wouldn’t go past 1 year? Sorry for the novel, but I feel like that’s pertinent information for cooking tongue. On another note, I’d love to hunt moose in AK one day. And caribou. That would be a dream come true.

@@vitaly6312 Thanks. Retriever training in one of my passions. One advantage of using a crock pot is I can be working outside while the tongue is boiling. I use a crockpot quite a bit for cooking moose chili, moose stew, etc.
