I’m Hispanic, and live in Southeastern AZ, right on the border between AZ and Sonora Mex. I’ve bow hunted mule deer, couse whitetail, and javelina in the area my whole life. It’s really awesome to see Steve try machaca. We make machaca with deer meat, and throw it in our eggs in the mornings. So It was awesome to see him try a piece of my culture!!👍🏼

@@louzer2566 Oh trust me it is. My grandpa has a ranch in San Luis Potosí and we would go 3-4 times a year from Texas and eat this kind of food. My grandfather also hunted wild game to put food on the table. He planted Maíz and other vegetables but he also hunted deer, rabbit, jabalina, quail and other game. My grandmother God rest her soul made amazing food only my aunt Irene learned her recipes. God willing this coming year I’ll be going again to enjoy the amazing food in Mexico. God bless

The bile thing is also part of my culture as well. Although we add herbs to the bile and meat before eating. It is respect to the animal, so we try to consume as much as we can, even keeping the bones to make soup broth. This goes for all big game that we harvest. For birds, we do not rip out only the breast. We pluck the bird completely, gut it, then cook the entire thing. I was born in the states and learned this from the elders that immigrated to this country. I still carry the tradition to the younger generations that I hunt with, even though our fore fathers are no longer with us.

Just a tip for using the Gaul fluid , when processing an animal I always put the Gaul bladder aside . When finished processing, use the fluid to wash your hands first , it’ll help take off all the fatty residue, then you can use normal soap ( especially if cold water Is only available in the field ) . as a hunter myself, im glad you are able to see that its not black and white when it comes to the taking of an animal's life. the philosophy i was taught was that going and harvesting your own meat was healthier and more ethical than the meat you get from the supermarket shelves. you know where the meat is from, you get exercise from it, you actually study and come to love what you eat (as an animal and a food source), and the animal i harvest gets to have a life and the freedom to roam. being a conservationist and animal lover myself, i believe that the choice should always be yours whether or not to hunt, but respect for the animals from 100 percent of the population is a must. without respect for an animal, they will eventually go away for a long time like the Bison or forever like the dodo. Hunting is not slaughter, if it was it would be called "getting". to hunt, is to harvest and pay respect to the land and the animal you eat and to gain emotion and pride with what you eat. Slaughter is without respect and and takes the joy, disappointment, and the anger out of the hard work it takes to get an animal.

I feel that if one consumes meat at all they have a philosophical and ethical duty to harvest, clean, and eat game at least -once- It is a spiritual experience. I am proud to be connected to my meat. Now that I'm older we have our own livestock and poultry. I know something I raise or hunt had good quality of life, it died in a clean humane way, and it was appreciated by me and my family. So many folks have been responsible for the death of hundreds of animals (and most of them in poorer living conditions) and will never know what that steak or chicken breast REALLY means. I can take pride and comfort in what I eat, and I'm proud to feel that way. I'm a grown ass man, and I still get that feeling when I'm crouched down next to a deer.. A smile on my face and sometimes even a tear on my cheek.. I'm truly fortunate to be in that position, and so very thankful and humbled. I hope that animal lived its BEST life while it was here... and I know it is going to help me live my best life. Get out and hunt.

He used 7mm Mag, and I believe it is because a) it is more than sufficient to take any North American Big game animal, and b) inside of about 400 yds, your range and wind estimation are much less critical.

He didnt say for this hunt, but in his book "American Buffalo" he mentioned using a .300 Win Mag for his 2005 Alaskan buffalo hunt. He also mentioned that caliber in his "A Guide to Hunting Bison" article on the MeatEater website.
