Mediterranean Chicken & Chicken Tikka Shami Kababs | Chef Shireen | Masala Mornings | MasalaTV
MEDITERRANEAN CHICKEN RECIPE :
Ingredients :
Chicken breasts 2 (made into 4)
Garlic paste 1 tbsp
Oil 2 tbsp
Worcestershire sauce 1 tsp
Mustard paste 1 tsp
Chili sauce 1 tbsp
Paprika ½ tsp
Chili powder ½ tsp
Oregano leaves ½ tsp
Chicken powder ½ tsp
Salt ½ tsp
Crushed black pepper ¾ tsp
Demi glaze 2 tbsp and water ½ cup mix together
Ingredients for Mediterranean Sauce :
Oil 2 tbsp
Chopped onion 2 tbsp
Crushed garlic 2 tbsp
Mushrooms sliced 2 tbsp
Baby corns 2 tbsp chopped
Capsicum ½ julienned
Onion sliced ½
Crushed red pepper 1 tsp
Garlic sauce 3 tbsp
Water ¼ cup
METHOD :
Cut the chicken breasts into four pieces. Mix all the above ingredients in a bowl, marinate chicken in this, and pan-fry in 2 tbsp oil.
METHOD :
In a saucepan, heat oil, add onion and garlic, fry for 2 mins, add mushrooms, baby corn, sliced onion, and capsicum, add crushed red pepper, garlic sauce, water, cook for a minute, and remove.
TO SERVE
On a platter put grilled chicken breasts on one side, and sautéed vegetables on the opposite side, and on top of the chicken put Mediterranean sauce and serve with mashed potatoes.
Ingredients & Method for Demi Glaze Powder :
Mix together demi glaze powder 2 tbsp in half cup water.
Ingredients & Method for Garlic Sauce :
Heat ¼ cup oil, add 3 tsp crushed garlic, fry till light golden, add in prepared demi glaze powder with 1 tsp chicken powder, cook for 2 mins and remove, serve with sautéed vegetables.
CHICKEN TIKKA SHAMI KEBABS RECIPE :
Ingredients :
Boneless chicken breasts 250 gm
Boneless chicken legs 250 gm
Oil 2 tbsp
Ginger garlic paste 1 tbsp
Chili powder 1 tsp
Roasted and crushed cumin 1 tsp
Yogurt 2 tbsp
Ingredients to Cook :
Button red chilies 4
Potato 1 small peeled and chopped
Garlic 4 cloves
Ginger 1-inch piece
Onion 1 cut into 4 pcs
Garam masala powder 1 tsp
Split Bengal gram ¾ cup soaked for 2 hours
Water 2 cups req to pressure cook
Salt to taste
Coal to smoke
TO MAKE SHAMI KEBABS :
Coriander leaves chopped ½ bunch
Small green chilies 4 chopped
Brown onion ½ cup
Egg 1
Oil 2 tbsp
To fry 1 egg beaten
METHOD :
Add boneless chicken breasts, boneless chicken legs, oil, ginger garlic paste, chili powder, roasted & crushed cumin, yogurt, button red chilies, peeled and chopped potato, garlic, ginger, onion, garam masala powder, split Bengal gram, water and salt in the pressure cooker and cook till tender and water dries. Shift to the blender and blend. Now mix chopped coriander leaves, chopped green chilies, browned onion, and egg in the minced mixture. make round kebabs and freeze. To fry, dip each kebab in the beaten egg and shallow fry.
