Very nice video about healthy food. In our country we call the combination of barley and lentils "cat dance" :) I like it too. I am interested in old recipes from past. Mostly porridge or gruel type. From past is puls (ptisani) too. I prefer cooking before frying. Do you know some recipes from corn, oat, rye, rice, millet and some legumes? Or some recipes from natives? I learn how to nixtamalize corn to make it edible. I have some very simple recipes from past but it is not very nice for view. On the other hand it is very cheap and healthy too. Like hummus you show. I do not heat the vegetables or fruits. Because of vitamins. I like see new videos for inspiration. I found an gallo pinto recipe.

I toss my beet peelings in EVOO and sea salt and roast until crisp (always watching and tossing as they cook). I had to peel 10 beets for a recipe once, and didn't want the peels to go to waste, so that's what I did. Unbelievably delicious. Also good crumbled over salads, on hummus, etc.

I made everything in this video including roasting the garlic. For anyone holding back, make it all! It did take a little more than an hour but I put on some music and jammed. The artichoke, white bean dip is amazing!

I have printed out a few of your recipes and a few days ago I made your Roasted Garlic and Artichoke White Bean Dip. I absolutely loved the flavours, specially with al the herbs! I toasted up some nice seeded bread, topped it with the dip and added some pickled onions...OMG, the flavours are amazing together. Thanks for this great recipe!!!

I tried the spiced grains and lentils and it was very good. did have to extend the cooking time to 35-40 minutes. I thought I had the quick cooking barley. I used lemon zest and the end of cooking in place of the suman and added the juice from one half of a cara cara orange. My advice is to definitely add the orange zest and juice. So yummy. I do plan on making the root veggies without the beets (ick). I will sub butternut squash instead.

Nice video , the Camera is loving that wallpaper in the background. If your camera allows you to turn off auto focus that will solve your shifting focus. Just make sure you set focus for the shot where you are standing and turn it off. Easy

My mom got home from Italy yesterday and the first thing she did was make lentil stew with lentils she brought home! It was AMAZING - wish I had your recipe to try 😍

@@CarolineLFranco yum! It’s such a staple in my house. It takes under 30 minutes to cook, very versatile, and super inexpensive but so flavorful. I don’t really measure anything… I sprinkle and pour until my ancestors say that’s enough 😂. Here’s what I do: In a nice heavy pot sauté a little onion, carrot, celery with a little EVOO. I add a little butternut squash or sweet potato depending on what I have on hand but I prefer the squash. For spices I add salt, pepper, a little paprika for color, herb de Provence and A Bay leaf. I let the veggies get a little soft then I add stock, (I have used chicken or vegetable broth) add a can of diced tomatoes or a little crushed tomato whatever you have on hand and add a couple tablespoons of tomato paste. Once that comes to a boil, I add a cup to a cup and a half of green lentils. I’ve tried the red but my husband doesn’t like those as much. I let that simmer for 20 minutes. It’s done at this point but are usually add a couple of handfuls of finely chopped kale if I have it. The kids like it when I add about a cup of Ditalini too. That’s it. I usually serve with homemade croutons or Cristini.. my hubby likes to sprinkle Locatelli on top and I drizzle a tiny bit of Sicilian evoo and there ya go! Cheap, fast, and everyone loves it. Your Spiced Grains & Lentils with the orange juice and zest sounded very good. I often freeze cooked grains/lentils in 1/2 cup servings to add to future meals. Although leaving them plain lets me flavor them to compliment the rest of the meal, I look forward to eating them more if they are already seasoned. Although many follow the Mediterranean Diet for its general health benefits, I'm always interested in the macros so I can choose an appropriate portion size. I would love you to add the nutritional values for your recipe. Calories/Fat/Carbs/Fiber/Added Sugar/Sodium/Protein. NOTE: I usually try to up flavor with other seasoning before adding salt to recipes. I'd love to see Lower Sodium options. This is the first time I've watched a video by you. I enjoyed the food photos from your website and presentation style.

What would be awesome is if you created some kind of PDF document outlining all that you did. Ingredients to buy beforehand, anything we should stock up on for such meals, cooking materials, etc. I new to the diet and... well... trying to cook edible food. Often I buy ingredients that last only for the one meal. Once its gone, its gone. Any tips you have say for buying ingredients for this meal but also building a stockpile or inventory for future meals e.g. stocking up on beans, etc.

Would the grain recipe work with rice? I am allergic to gluten and can’t eat barley because of it but want to try your recipe

Absolutely you could try it with rice! Maybe a short grain brown rice for a wild rice for a more nutty flavor!!

How long and what temp did you put the roasted garlic in for? and can you use any other citrus besides orange?

The oven was at 400 F for the garlic and depending o the size anywhere from 30-45 minutes! And yes, lemon, grapefruit or lime would all be delicious paired with the spices!

A dairy free yogurt or cream cheese could work great, I don’t think tahini would give you the same texture…hopefully that makes sense :)

My hubby's doctor has recommended the Mediterranean Diet for help reasons, but he gets migraines from garlic and milk. Will I be able to find recipes for him? He also can't do much soy.

Hi Donna! Yes! Just always omit the garlic in recipes and for any milk products there is always a dairy free or lactose free options usually with cheeses and yogurts and I always try to suggest those kinds of options Luckily soy is so rarely seen on the Mediterranean diet
