👉Ingredients:
1 puff pastry sheet
1 cup spinach, blanched and chopped
1 cup feta cheese
1/2 cup grated mozzarella and cheddar cheese (mixed in)
Pinch of salt
1/2 tsp chilli flakes
1/2 tsp crushed black pepper powder
1/2 cup Kalamata olives
1/3 cup roasted red pepper, finely chopped
Some finely chopped parsley
Flour as required for dusting
👉Method:
Place the spinach leaves into a pot of boiling water for just one minute and then immediately transfer the leaves to a bowl of ice water to stop the cooking process. Once the spinach has blanched, squeeze out any excess water from the spinach, chop it finely and transfer to a clean bowl.

To prepare the spinach and cheese mixture to a bowl add feta cheese, chopped spinach, olives, grated mozzarella and cheddar cheese, chopped roasted peppers, some finely chopped parsley, chilli flakes, crush, black pepper, and salt to taste. Give this all a really good mix until well combined.
Now lightly dust a cutting board or clean worksurface with flour and place the thawed puff pastry on top. Spread the spinach and cheese mixture onto the rolled out puff pastry leaving an empty inch of pastry on each side.
Carefully roll the field puff pastry as tightly as you can into a large log, just as shown in the video gently pinching the edges to seal them.
Then using the cutter, size the puff pastry into equal rounds. Now take a sharp knife and carefully cut each of the puff pastry round. Arrange the cut pieces onto a large baking tray, lined with parchment paper and space them out evenly.
Bake these at 400° for about 20 to 22 minutes until each of the pinwheel rounds turn golden brown and flaky.
Serve these hot or at room temperature.
Store leftovers for up to three days in the refrigerator with a lid on.
