Also, when you mention the prime rib tastes like beef jerky, it's because it's dry aged for a very long time like i saw it said up to 28 days, and the cream sauce is most probably horse radish which is kinda like what you may know as wasabi, goes perfectly with a little fatty cut like prime rib. The crust on the Cajun steak i saw looks perfectly fine, a little bit darker happens when Cajun seasoning is burnt and for the inside being tough it is also because it is dry aged so almost no one ever gets dried age steak more than medium rare, but you are right, the color of the steak is not even at all, that looks kinda sad not gonna lie.
