Crispy chicken burgers are one of the top favorites of my kids. My son says “I can eat this every day”. When he sees I am thawing chicken he always requests to make crispy chicken burgers. Let me share my favorite way to make them.
MEK Crispy Chicken Burgers
Chicken tenders 2 lbs
For marinade:
Buttermilk ¾ cup
Egg 1
½ tsp salt
1 tbsp vinegar
½ tsp paprika powder
Some red chili flakes
For dry flour coat:
1 cup flour
¼ cup corn starch
1 tsp paprika powder
½ tsp garlic powder
½ tsp onion powder
1 tsp dried oregano
1 tsp black pepper powder
½ tsp red chili flakes
½ tsp cumin powder
¾ tsp baking powder
For pickled salad:
½ cup red vinegar
½ cup white vinegar
1 thinly sliced onion
1 long carrot- Julienned
Few black peppercorns
A dash of salt and sugar
2 cups of shredded romaine lettuce
2 tbsp fresh chopped parsley
Brioche buns
Thousand island dressing
Sweet relish
Sliced tomatoes
Lettuce
Vegetable oil for frying
Combine marinade ingredients. Remove about 2 inches of ends from chicken tenders to give them a more proper shape. Flatten chicken pieces between two parchment pieces.
Pour ¼ cup marinade into the bottom of your bowl and spread it around. Arrange chicken pieces on it in a single layer. Pour some more marinade on it and add more chicken. Repeat that process till all the marinade and chicken are used up. Refrigerate for an hour.
Combine the dry coat ingredients and mix them well. Remove about 3 tbsp of the marinade from the chicken and add it to the dry flour coat. Mix it well till the flour coat has some clumps. That will help in crisping up the chicken.
Pour the two vinegars in a pot and bring it to a boil. Remove from the heat and add sliced onions and carrots to it. Also, add peppercorns in it. Cover with a lid for 30 minutes. Then remove the lid and let it cool to room temp.
Add the shredded lettuce, a dash of salt, and sugar to it. Add chopped parsley and toss it well. Transfer it to a jar and refrigerate. This can stay good in the fridge for up to three days.
Heat a quart of vegetable oil in a pot. Remove the chicken from the marinade and coat in the flour mixture. Coat all the chicken in the dry mix and set it aside on a wide plate.
Start frying the chicken in medium hot oil until it is nice and golden on both sides. Remove from oil and drain it.
Slice your buns in half and spread a generous amount of dressing on it. Top with a chicken filet and some more dressing. Top it with a generous amount of pickled salad, Tomato slices, and lettuce leaf. Serve them with homemade steak fries and enjoy your awesome yet delicious everyone's favorite meal with your family.❤️
