생 멜론을 넣은 멜론 모양의 생크림 케이크를 만들었어요~
기본 케이크 시트와 생크림으로 간단하지만 모양을 색다르게 만들어 봤어요~
생각보다 간단하게 만들 수 있고 멜론의 향이 케이크에 스며 멜론 맛도 많이 나는 것 같아요~
생 멜론을 크게 잘라 사용했는데 사용하기 전 키친타올로 물기를 제거하고 사용하면 좋더라구요~
아무래도 생과일이라 만들고 빨리 먹는게 가장 맛있는 것 같아요~
케이크 겉 부분만 그린색의 생크림으로 아이싱했는데 깔끔하게 아이싱하지 않아도 흰 크림으로 무늬를 내주기 때문에 괜찮더라구요~
겉에 장식한 흰 생크림은 휘핑을 약 60% 정도로 묽게해 사용해야 더 자연스럽게 표현된답니다~
멜론 꼭지도 멜론 과육으로 모양을 내서 올리니 귀엽더라구요~

▶틀 사이즈 Mold size : 16cm x 8cm
▶재료
달걀 4개
설탕 100g
꿀 15g
바닐라익스트랙 5g
무염버터 35g
우유 55g
박력분 120g
멜론
휘핑한 생크림 (생크림 270g + 설탕 27g)
휘핑한 생크림 (생크림 100g + 설탕 10g + 그린 식용색소)
휘핑한 장식용 생크림 (생크림 40g + 설탕 4g)
▶레시피
1. 뜨거운 물이 담긴 냄비 위에 달걀이 담긴 볼을 올리고 설탕, 꿀, 바닐라익스트랙을 넣고 온도가 40도 정도가 될 때까지 저으며 섞는다.
2. 핸드믹서로 풍성한 아이보리색의 거품이 될 때까지 휘핑하고 박력분를 체 쳐 넣고 섞는다.
3. 녹인 무염버터와 우유를 섞어 둔(온도 50~60도) 볼에 반죽의 조금을 덜어 넣고 섞고 본반죽에 넣고 섞은 뒤 18cm 틀에 붓고 170도 예열된 오븐에서 35~40분 정도 굽는다.
4. 시트를 식히고 윗면과 밑면을 잘라낸 뒤 4장으로 슬라이스하고 12cm, 13cm, 15cm, 16cm 크기로 자른다.
5. 멜론의 껍질을 제거하고 얇게 슬라이스한 뒤 키친타올에 올려 물기를 제거한다.
6. 돔형 틀에 랩을 넣고 12cm 시트를 올리고 휘핑한 생크림을 바르고 슬라이슬한 멜론을 올리고 크림을 바른다.
7. 반복해 쌓고 냉동실에서 30분 정도 굳힌 뒤 틀에서 꺼내 그린색으로 휘핑한 생크림을 겉면에 바른다.
8. 휘핑한 생크림으로 멜론 무늬 처럼 장식한다.

15g Honey
5g Vanilla extract
35g Unsalted butter
55g Milk
120g Cake flour
Melon
Whipped cream (270g whipping cream + 27g sugar)
Whipped cream (100g whipping cream + 10g sugar + green food coloring)
Decorative whipped cream (40g whipping cream + 4g sugar)
