Hi Melat! "Treppa" ! Exciting and mouth watering dish, it is one of my favourite food that I like to eat when ever I can. I see you are scraping out the out side dark part of tripe (Cheguara). That is absolutely wrong. It is the nicest and testest part of "cheguara"! you should not suppose to do that. What you have to do is that remove and scrape the dirty part of fat from the inside part of it and wash is with lemon or vinegar then cook it, that is it. And I can see, I think you are also using sheep or goat "Cheguara", it is okay if that is what you like, but the ox or beef tripe (cheguara) much testier than sheep or goat, from what I have seen from your previous video, you do not have problem finding ox tripe (cheguara). Other than that, you cooked a delicious tripe in a nice way, and thank you for sharing your tripe making skill. Bravo! Gobeze!
