This dish is a fav of mine when I go for a sit down in a Chinese restaurant. There are some Thai dishes that use peanuts/cashews as well...done up quite differently from this one...but the Chinese version is my pref.

My dad used to make chicken in a homemade sauce. He would put it in a crock pot (slow cooker), cut up some onions and garlic and put it in there, put some orange juice and peeled and cut oranges, and a bit of brown sugar, and cook it until the chicken is done. He liked to serve it with rice or mashed potatoes. I still make it to this day since he passed years ago.

Hello Wayne. I’m writing it down. Sounds like something I will like and easy to make. Can you tell me what kind of orange juice and how much. Also how much brown sugar. I like using boneless and skinless dark meat. Less dry than white meat and much more flavourful. Hope you’re having a great Sunday. I’m from Vancouver BC. Canada. Suppose to be hot again but at least we don’t get much humidity here. Take care Carole. Edit, and how many oranges should I use. I’ll be thinking of your dad when I make it. I might call it Wayne’s dad’s chicken.

Carol, any kind of oj would work. He liked the one with pulp. About half a bag of brown sugar or a little more, so it mixes with the oj. He would julienne some onions and chop some garlic and mix it in as well for the extra flavor. If you make it, let me know how it turns out. I may have to make some next week. It's been so long since I had it.

Carol, yeah, the heat is unbearable. That's why he always made it in the crock pot so that way it wouldn't get so hot in the kitchen. Another thing I make that he loved was I'd get Amish apple butter and bake onions and chicken in it. He loved that, said he was surprised he didn't think of it. I guess you can use any apple butter, but I always bought it from an Amish family that would set up at a farmers market. Believe me, you can taste the difference.
