In this video, I'll show you how to make the most delicious melt in your mouth pineapple tarts that everyone will love. ✍️Ingredients: (for about 100 pineapple tarts)
Skin
1. Salted butter 250g
2. Salt
3. Vanilla extract 1/2 tsp
4. Icing sugar 75g
5. Egg yolks x 1
6. All purpose flour 300g
7. Corn flour 50g
8. Milk powder 50g
Golden Egg wash
1. Egg yolk x 3
2. Vanilla extract 1/2 tsp
3. Corn oil 1 tsp
Pineapple filling 500g
✍️材料:(約100個鳳梨酥)
酥皮
1. 有鹽奶油250克
2. 鹽
3. 香草精 1/2茶匙
4. 糖粉 75克
5. 蛋黃 1 個
6. 中筋麵粉 300克
7. 玉米粉 50克
8. 奶粉 50克
金蛋黄液
1. 蛋黃 x 3
2. 香草精 1/2茶匙
3. 玉米油 1茶匙
鳳梨餡500克

Tq for sharing. Subscribed❤ 1. What brand of milk powder is best pls? Fullcream ok? 2. When you said, add flour to the dough if needed, what flour may i ask? Tq much appreciated ❤

Thank you for your support! 1. Any brand of milk powder should be fine. Full cream is okay. I use milk powder from the shop selling baking ingredients. 2. Add all purpose flour if the dough is wet and sticky, add gradually until it is not sticky and can form ball.

I followed your recipe and my dough is very firm and not as soft as yours. Is it the cold weather? I have added 3 tbsp water and is trying and will let u know.

Hi. It maybe due to different brand of butter and flour. You may try not to add flour in one go. If the dough is very firm, try add some softened butter or corn oil.

If you use unsalted butter, you may add extra 1/2 teaspoon of salt to bring out the flavour.

6g dough, 4g pineapple filling. Pineapple filling I use the ready-to-use one, can get it at ingredients shop.😊

I use 1 tsp for dough, 1/2 tsp for paste…1/2 tsp pineapple paste is around 3-4g…🙂

You can substitute it with soy milk powder, or just normal flour also can. But without milk powder, the flavour, texture and richness of the pineapple tarts may be different. 🙂
