Oh this brings back such good memories of my Grandmama making this at Christmas time. My home life was not so great & her house was always safe, peaceful & she made me feel special. She gave me the special job of putting a pecan half on top of each pieces of candy. Sometimes I helped wrap each piece in a piece of wax paper too. It was such a happy time. Thinking back to the early 1970's and how hand mixers were made much sturdier than the junk of today, I can remember my grandmother, who was the ONLY one (not even mom) who could make divinity that wasnt sticky making this so perfectly and light. I can almost smell this video. I will say, that she never divided her syrup like this, but I can see how it works. She would stand there and stream the thinnest stream of crack-stage liquid into the whites in what seemed like 5 minutes. Oh, how I miss both of them. Maybe I will try making this again in their honor. Loved this video and the story about the pants😂.

I haven't made Divinity in a few decades. I loved making it with my mom❣❣ We made double batches of pink, green and white. We put pecans in the pink, walnuts in the white and no nuts in the green. It was handy having both of us to spoon out those double batches because, as you know, you have to work fast before it sets up!😄 You've inspired me to get my 2 daughters together and carry on the tradition! I know that Mom would like that and watch over us from above (and probably have a few laughs at us fumbling around❣😄). Thank you for the inspiration and sharing your talent with us‼😊

My Grandma was the Divinity queen of Duncan Oklahoma. She couldn't go anywhere in town without a crowd of autograph seekers swarming around her car, photo flashes and pen and paper in the air. You'd a thought Elvis was in town for some reason. A true legend! 😅 she is no longer with us but the divinity queen myth endures. Some say on a quiet fall night if the wind is just right, you can hear a mixing sound coming down from heaven.😊 Thanks for sharing. It brought up so many great memories.

I've greatly enjoyed your recipe videos, and especially the candy-making ones. My mother taught me to make candy, with Peanut Brittle. She also made Divinity, but rarely, and always without children. She was a fancy city girl in her mind, and used a thermometer, even though her mother taught her the water test. Watching you do the test it makes a whole lot more sense to me, and watching the spinning thread was eye-opening. I can't wait to try making Divinity and getting the hang of the test. These days, my candy specialty is English Toffee, but I can't eat it these days. Instead, I make Saltine Toffee Crunch, which takes much less time, and produces a more tender, crispy, deadly product, coated with chocolate and topped with chopped or slivered toasted almonds. Yum! (!c. butter, 1 cup sugar, bring to boil, boil 5-7 minutes, remove from heat. Fill a sheet pan with saltines (or other crackers), breaking to fit. Pour syrup over, and place in 350 oven for 5-7 minutes, until somewhat brown and bubbling. Place pan on a rack and sprinkle with 1c chocolate chips - I prefer bittersweet. Let stand for 10 minutes, then spread melted chocolate with a spatula. Sprinkle on almonds, and press them into the chocolate. This works best if you crush them first. Cool and break into pieces. SO good for a pot-luck or party.

You mentioned your yellow jasmine. I recently cut my yellow jasmine vines back. Prune I guess is the proper term. It had taken over one of my gardenia bushes. I had to carefully cut it out bc my gardenias were blooming. It has also taken over my wooden fence that it grew on. By the time I got through cutting it back I had a stack of vines over five feet tall and about four feet wide. It amazes me how fast it grows and mine was beautiful this spring. It actually bloomed in late winter this year. Sorry I got off topic but when you mentioned yellow jasmine I had to tell you my story. Divinity is a candy I love but hate to make. Very few people even cook this bc it is messy and complicated for inexperienced cooks. But oh so delicious. Thank you for sharing. God bless

I learned to make these from my mom. She was a master at it! I always make it in a stand mixer, just easier for me to pour the liquid in the egg whites, but it works. I have never tried to do half of it at soft boil stage and the other half at hard crack! That is awesome! I am definitely going to try that. My family has nut allergies, so we leave out the pecans all together. Still super yummy. And a side note for those who are allergic to corn, you can use rice syrup instead of corn syrup and it works beautifully!

My mom (God rest her soul) used to make divinity when I was a kid, so this brought back memories. :) She also taught me how to do the soft ball and hard crack stages because we didn't have a candy thermometer back then. I've since bought one, but I find doing the water test to be more accurate when I'm making different candies. It's good to see someone else still does it this way.

Thank you for showing how you make this! My Mom gave me her recipe and I lost it in a tornado. She was still living but couldn’t find it to give it to me again. Anyway, I loved hers because it wasn’t soft. It was firm like a piece of fudge. She made it in an iron skillet and always told me, “Make sure your children are not in the kitchen because this is so dangerously hot!” She did just like you and felt it in a cup of water. She used a stand mixer and poured that heavy iron skillet into a GLASS mixing bowl…just like you! She greased a pan though and cut hers in squares and had chopped pecans in it. She told me never to make it on a rainy day. I may get brave and make it this Christmas since you’ve shared your video. However, I think I’ll use my candy thermometer just like I do with my fudge as I don’t trust myself to know when it’s at the hard boil stage. Thank you! Most people make it soft and I don’t like it that way.

I am Rewatching your video and divinity. I have not made it in a long time and I thought I might make it for Easter. I may attempt to add a pastel color to it to make it more Springlake. But what I wanted to tell you was my brothers wife is from North Carolina as it is her mother for generations. She has lived up here in the north since she came here to college 30 years ago. She still has a lovely accent. I asked her if she called the burner on a stove an eye. She said she did not but growing up in Hickory her mother dead and her grandmother did along with most of the ladies she knew. She said I must’ve called it an eye as well. She did point out to me that she had spent some of her 18 years living in England before coming back to North Carolina and maybe that’s how is she did not use that word but she thought she might’ve as a child giving it some thought. She’s going down to North Carolina next week for a week to see her mother. When she asked her mother about it and she said that’s what I call it and they had a good laugh about it and then I told her that she should follow your channel and have her 91-year-old mother follow the channel as her mother I believe is a lot like you she only recently closed her business and she was just recertified for her license and she enjoys every day. Oh My! You're the only person I've seen make divinity like my mom! She used the water test! I remember as a kid waiting to eat the tested sugar syrup!🤣 Thank you so much for bringing up such a precious memory of my mom!💖

My grandmother was the one in the family that made divinity. She was from Arkansas. My uncle (my mother's brother) was the one that insisted that his mother, Grandma, made divinity every Christmas and he would be the one that would eat the most of it all by himself. He did that since he was a child, or so the family stories go. And he was that way until Grandma was no longer able to do it anymore.

Yes, you can use food coloring for the different seasons. I just always make mine at Christmas and leave it white.😋👍🏻❤️
