I can answer this actually! Citric acid is a weak acid, which means if you half-neutralise it, it makes something called a buffer solution, which can resist small changes in pH in the liquid it is dissolved in. Citric acid is classed as a weak acid because it only partially splits into ions when you dissolve it, and forms dynamic equilibrium (Balance; The forward rate and backward rate of a recersible reaction are equal) between the Acid molecule, and the Ions (The products of the reaction. It will always be H+ ions, and the original product now called a salt(?), minus one of its hydrogen molecules, and it will have a negative charge.) On this next part, I am not 100% sure if I remember the mechanisms properly but the end result does remain the same. Feel free to point out errors.) In that state, if you were to alter the pH by adding..... An Alkali or Base: The negative ions react with the H+. There is now less H+ in the dynamic equilibrium of the citric acid, so Equilibrium shifts, favouring the production of more H+ ions, to lower the pH to what it was originally. An Acid:The adition of more H+ ions decreases the pH. As there are now so many hydrogen ions, Equilibrium shifts to the left to decrease the concentration of H+, and to raise the pH to its original value. The negative salt ions re-associate with the new excess of hydrogen ions. The pH is raised. The end result is the same though: For small changes, Citric acid can resist changes in pH. And because Citric acid is so weak, its original pH isnt too far from Neutral compared to other acids. Additionally, Citric acid is found naturally in citrus fruits, and is mostly harmless to people when ingested in the concentrations you find it in in drinks and fruits. While it is true that it can damage your teeth, if you brush your teeth regularly, It doesnt pose much of an issue. Other products like Coffee and Tomato sauce are also mildly acidic, and so are the fruit juices you can find Citric acid in naturally. Sugar is probably the worst product for your teeth out of everything you consume daily! As long as you take good care of your teeth (Brush twice a day, Floss, Use mouthwash, brush your tongue) then you dont have to worry about the issues caused by acidic foods and drinks for the most part.

@@ChipchipCookies first i must say that what is considered "weak" is very obscure, especially if something which does melt teeth is called so. then, you miss the point: as it is clearly harmful to the teeth (while it's lowkey acknowledged it does melt the teeth, it's also reported that increasing amount of western teeth are suffering premature enamel damage, one possible cause being excessive exposure to the additive acids in our foods) - why is the use of these acids focused mostly on the cheaper end products? as the higher end products with LESS food additives and additive acids show similar expiration dates and the higher price most often mean better taste and quality, and the acids are used in so small amounts it cannot be explained by making the food cheaper by mixing it with these substances, then their usage should be considered completely unnecessary, thus because harmful to the person who eats it, it should be avoided completely. and yet the lower end foods are filled with these acids, and if don't want to eat them you need to pay more. why do they put these acids in our cheap foods if it's not necessary to the food in any way, as seen from the more expensive foods? to me this seems like the food industry is deliberately poisoning the poor.

Hi there@@Eye_Exist, The pH of citric acid varies between 3 and 6. The pH of most fruit juices (Edit:The fruit jucies in the listing. Not all fruit juices are included in this but some of the common ones are.) are between 4 and 3 according to the USA department of agriculture. The volume of Citric acid used in a buffer solution will be absolutely neligable to the pH of the fruit juice itself. It is used as a preservative to allow the fruit juice to remain fresh tasting for longer, and as the acid is naturally found in the products anyway. It's cheap and allows the fruit juice to remain on shelves for longer, reducing waste. It is true that fresh fruit juice is much tastier though. If you really want to avoid harmful products, I would reccomend looking into your ingredients lists. You can learn a lot by finding out what is added for which reasons - For example, A quick google search reveals that Fructose interacts with the process that tells you you're full when you eat, and leads to food-seeking behaviours and increased appetite. Refined carbohydrates (Such as white flour, sugar, anything else that's had its fibre and bran removed) have a higher glycemic index than their more natural counterparts. They break down fast into sugars and lead to a spike in blood sugar. Some companies (Cough, Macdonalds) intentionally make use of properties like those, as blood sugar crashes and the effects of fructose can lead to cravings and increased food intake, which they can profit from with the service of fast easy food. You are fully right that some companies put additives in their food that are detrimental to us in the long run. You can eat more healthily by ingesting less processed foods - Mostly in the carbohydrate, sugar and fat section of your diet. Anything you make at home is guaranteed to be much better for your health than pre-made products as you can ensure no harmful products go in, but with things like fruit juice, it's just not worth the hassle of buying and juicing your own fruit when you could put your energy into drinking less soda, or eating wholegrain pastas, cereals and breads and leading an active lifestyle. Veggies are good for you. :] Second edit:Strong acids are usually 0-1, Weak acids 4-6. Even at its strongest, Citric acid does not make the strong acid category.

Hi @@Eye_Exist, Buffer solutions/Acidity regulators are used to prevent microbial growth, as Microbes will spoil the product and lower its shelf life (European food informational council, 2021). By preventing microbial growth you will extend the lifespan beyond what the normal products could go through before being spoiled by spoilage bacteria. Edit:And yes, They do have expiration dates, however the expiration date will far outlive that of the fruit juice. Yes, they may have identical expiration dates, but you need to compare it to its date of manufacture to see how long the life of the product is. It is the life of the product that will vary.
