Muckalica (Muchkalitsa) is the best of the Macedonian skara (grill) in a thick stew. Roasted peppers, grilled meat, smokiness, and spice all in one.

YOU NEED:
1 kg boneless pork
500 g boneless skinless chicken *optional
300 g smoked pork (anything like belly, sausage, bacon etc.)
2 onions, roughly diced
6-7 cloves garlic, roughly chopped
4-5 tomatoes, peeled
7-8 large red peppers (Shepherd peppers are best)
8-10 small, or 7-8 large sweet yellow banana peppers
MEAT SEASONING:
Garlic granules, paprika, black pepper, Vegeta, hot chili flakes, all to taste.
1 Tbsp. vegetable oil
POT SEASONING:
Paprika, salt, black pepper, Vegeta all to taste
3 Tbsps. vegetable oil for sautéing
Water. Enough to come half way up the meat & peppers in the pot.
