This is our go-to breakfast now, thanks for sharing this. I add garlic, thyme and parsley to the mix first. After pouring into the skillet I sprinkle shredded cheese on it before adding the tortilla. Flip it, add more cheese, ham, spinach and tomato and we're good to go. :)

I have been making quesadillas for years. This technique of putting egg mixture on first and then tortilla is just the opposite of what I have always done. I think it is genius. And, as with any quesadilla, the ingredient options are amazing. I would add some herbs to the egg mix, could be any combination. I could even see this going a bit sweet for dessert by adding a spoonful of sugar to the egg mix, with some sweet spices such as cinnamon and cardamom and some fruit such as apples or berries. Maybe a dollop of sweetened cream on the top. So good. Thanks for the great idea....
