Meatballs
4 lb. hamburger
2¾ c. quick oatmeal
3 eggs
¾ c. evaporated milk
⅔ c. milk
¼ c. chopped onion
2 1/4 tsp. salt
¾ tsp. garlic salt
¾ tsp. black pepper
1/4 cup BBQ sauce
Barbecue Sauce-
¾ Tbsp. lemon juice
¾ tsp. garlic salt
¾ Tbsp. vinegar
2 Tbsp. Worcestershire sauce
1⅓ c. ketchup
½ tsp. liquid smoke
1 c. brown sugar
Shape into balls and fit tightly in baking pan. Cover with sauce. Bake at 350 uncovered for around an hour or less depending how big the meatballs are. Serve and enjoy!
Parsley Potatoes:
Cook small red potatoes.
Melt some butter. Add salt, garlic powder, parsley, a bit of lemon juice to it. Pour over potatoes and stir. Serve! We like to also eat them with sour cream and/or shredded cheese.
Mashed Potatoes: • AMISH/MENNONITE STYLE ...
Mashed Potatoes:
This recipe is just a bit of a gauge as to how much. It's not specific. Add more or less milk if needed. As well as season to taste.
5lb bag of Red Potatoes
1/2 c.butter
6oz cream cheese
1 c. sour cream
about 1 can evaporated milk (or regular can be used) adjust the amount as needed.
salt & garlic powder to taste.
Directions:
Boil potatoes. Drain completely. Pour into mixer bowl. Mash Potatoes, stirring several times. Do not add liquids until smooth. Then add Butter, salt & Garlic. Once whipped, add cream cheese & sour cream. Then begin by slowly adding milk until you reach the desired consistency. Stir and scrape the bowl a few times.
Then brown butter on the stove. And after you’re potatoes are heated and ready to serve, add the butter to the top.

Rhubarb Torte
Crumbs:
1 c. butter
2 Tbsp. white sugar
2 c. flour
Custard:
5 c. rhubarb, finely chopped
6 egg yolks
1½ c. sugar
4 Tbsp. flour
1 c. cream
¼ tsp. salt
1 tsp. Vanilla
Meringue:
6 egg whites, beaten
pinch of salt
¾ c. white sugar
Crumbs: Mix ingredients and press crumb mixture into cake pan. (I wouldn’t use all the crumbs, it’s plenty thick IMO )
Custard : Mix ingredients together and pour on top of crumbs. Bake at 350 for 40-45 min. Meanwhile make merengue. Add to the top of the dessert before it’s quite done baking. And continue baking until slightly brown. Chill and serve.

Custard Pie
If you don’t want 3 pies- adjust the amount to what you need.
3 unbaked pie crusts
Filling:
1 c. sugar
6 eggs
1 c. brown sugar
7 c. milk, heated
5 Tbsp. flour
1 c. half & half
dash of salt
2 tsp. vanilla
Mix sugars, flour and salt together. Separate eggs. Add yolks to dry ingredients and beat whites until stiff. Add half & half and vanilla to dry ingredients and yolks. Beat until smooth. Add heated milk then egg whites. Pour into pie shells. Bake at 400° for 10 minutes, then reduce heat to 350. For approx 30 minutes. Makes 3 pies

Next time you do a roast, try this! My mom cooks her chuck roast on low for 12 hours with 1 pkg ranch mix 1 pkg Italian dressing mix and 1 pkg brown gravy mix with approximately 1 cup of water (just eyeball it)… it turns out EXTREMELY moist and tender every time! My absolute favorite meal. 🤤

For custard pie, add about half a teaspoon of lemon extract and half the vanilla. The extract makes a huge difference!

I make my pot roast the same as you. I’ve recently began adding 1-2 tsp of tomato paste. It’s fantastic and now use it in all of my beef dishes. Custard anything is my favorite desert. Your pie looks delicious!! I add vanilla and nutmeg. 😋 Our weekends are easy meal preps too! On Fridays, when the kids were in school yet, I’d make pizzas using flour tortillas. They make a great thin crust. I’d make a pan of taco meat and coat it with tomatoes, onions, olives, cheese, etc. and serve with sour cream and lettuce on the side. The kids loved it and make it for their kids today. Thanks Lynette!

I grew up in Kansas and we had a large mennonite community. There was a particular restaurant we would stop at...the food was to die for! So, so good! Everyone there was so sweet and helpful...I live in New Mexico now so I really miss that wonderful food. Take care! I'll help you with that pie..I love custard pie! YUM

I love to cook and watch others do so. I made Christmas and Thanksgiving dinners with my mom for 30 + years. Her recipes the same used by her mom and grandma. Dressing was made from scratch using home baked biscuits and cornbread she baked early and froze. She thawed them out that morning and we put the bird in the oven and we went to church. In my family recipe sharing was the language of love and my granddaughter now makes the meals the same way. I love how you cook since it reminds me of my mom and grandma’s ways. I heat up the canned evaporated milk and add that to my mashed potatoes. Makes them so yummy! All your meals look so amazingly delicious!

Chuck is our favorite, either at 350 for 2hrs tight foil cover and half cup water or crockpot, less time when smaller roast. I ALWAYS TAG YOU when Im talking to someone about brown butter and mashed taters online, I don’t want my mash any other way now!! You are the best! 🍽️

I use an ENGLISH Roast. More meat - less fat - I put it in the crock Pot the night before for a 2:00 o'clock late Lunch early dinner. Then with the leftover broth & vegetables & meat I make vegetable beef soup or beef n' noodles. Nothing goes to waste. 2 meals for the price of one. My mom made the best custard pie (dad's favorite) she heated the milk & slowly stirred in the eggs so they didn't scramble up on her. I remember she put in nutmeg. My daughter has her recipes, I can't remember all of it. Things you miss later in life after they are gone.

The easiest and delicious roast beef is to brown all sides in a mix of butter and oil. Add enough water to the pot to cover about three quarters of the beef. Empty one package of onion soup mix over it all and heat it to a quick boil and immediately turn down the heat to a simmer around no.2. Cover it and leave it alone for three hours, turn the beef over and cook for another hour covered. The quickest way is to use a pressure cooker. If adding vegetables add the chopped carrots at the beginning before adding the water to cover them and then add the chopped potatoes after the three hour mark. After cooking remove the meat and vegetables and then take a small plastic or glass container and pour in about a quarter cup of cold water. Add about a couple tablespoons of flour. Put on the cover and shake hard to mix it. Pour it all over the liquid in the pot and stir constantly over medium heat until it cooks into a nice gravy. If it is not thick enough mix the water and flour again and add gradually until you get it the way you like it. Add the beef and vegetables back into the pot and add salt and pepper to taste. Stir very lightly and place it all in a serving dish. It will have a rich dark gravy covering it all.

I believe the milk heating thing (scalding) has to do with the non pasteurized milk of days gone by. Also I’m obsessed with Amish cooking. Keep ‘em comin. (Also also SOMEday I am gonna do the turkey dressing pan fry thing. It’s been on my list for 2 years. This year is the year!!!

Yes, that was my thought, too. I grew up on a dairy farm and my mom always said that if you didn't scald the milk for pudding, custard and cinnamon rolls, it would taste like soap!

Looks amazing. For the beef if it ends up dry its because its lean and you are over cooking it. I made the same mistake doing beef stew. Solution i found was just to lightly sear the beef and let it finish cooking via the simmering segment of the stew. I was cooking the beef for roughly 5 minutes before adding my liquids but to keep the stewing beef tender i ended up changing to searing it in a hot pot or pan for about 30 seconds per side. Amazing the difference it made.

Lynette.. Love the simple cooking videos. can be simple but very tasty and filling. Love seeing how happy Harper is and how the kids are willing to help you. So sweet. Since I have been ordering from Walnut creek I do love their cheese the white American cheese ad the mild cheddar last time I ordered I think it was 45 lbs .or more of the cheese I do that so I have enough to last the summer till I can reorder again and I do love their Apple butter and also the syrup.. You might wanna look at a video and it is from a while back but it’s Martha Stewart making her piecrust. That’s how I learn to make it and it really comes out great every time if you wanna make it from scratch but I also use that ones from the dairy section too

This has nothing to do with this video. I was making another batch of protein balls for about the 100th time. Mixed them up, tasted one and it was OK but not like my usual. Stood there for a while and then stared at the chia seeds in front of me. I forgot to put them in. Took all the balls, added the chia seeds, mixed them up and rolled them. YUMMY!!! Thanks for saying to add the chia seeds. Even my 24 year old granddaughter makes them but always heads to Mamaws fridge to be sure I have protein balls. Even last Thanksgiving, she got out the container of protein balls in the afternoon. After passing them around the room, there was hardly any left and I had made a double batch. You know they are good when the young adults took these over chocolate chip cookies.❤😂 Thanks again for sharing this recipe!!

I almost skipped over because so many Amish meals seem too complicated or look labor intensive. These were all up my alley, flavors I love 💕. We have an Amish restaurant about 30 minutes away, & I love their food, but they are so far. I was already subscribed, so I did watch because that meant you were good 😊!

👍🏽 thanks! I think there are definitely some complicated recipes. But In general I’d say the original Amish style cooking is pretty basic. At least when I compare them to the Pinterest recipes I often find 🤪.

You can cook your custard type filling in microwave too. Just cook at 3 min.interval and stir at each increment.

When your potatoes are mashed, add an egg. My daughter-in-law taught me this trick. It goes good with cream cheese in mashed potatoes.

Thanks for dinner ideas! Your meals look so delicious. Chuck roast that have some fat,like you said, are usually very moist. Adding broth and Lipton Beefy Onion soup mix in the broth helps with moisture as well...Loved the kids helping you cook. There more apt to eat the food when they help as opposed to declaring what they don't like...😊💖

I've been watching your videos for a couple weeks now. I'm not amish or Mennonite but I grew up in New Holland Pennsylvania. I was looking for recipes I grew up with. I always felt like the amish people didn't like us but you are great! I know you're Mennonite now. What are the differences between Mennonite and Amish?

Next rume you make the custard pie, sprinkle cinnamon over the top. It will add a beautiful flavor. We do a similar one in South Africa but call it a Milk tart.

I'm always so surprised you don't can even I can . lol my grandma German n canned tons n recently started canning love it. n I know what's in my food I've done soups pot sweet pot asparagus carrots Tom's tomato sauces made my own rotel I do chili's n pickle chili's n other things only have few cans of fruit from store left in pantry. oh canned pinto blk kidney n white beans as well. chicken beef oh n beef broth chicken broths

I have canned 😉 I filmed a bit last year. I just don’t have the resources as easily - no garden. I don’t have a lot of storage. So it’s not something I do a lot of in this season. I’m quite busy.

Nutmeg on top of custard pie, befor baking, is classic. Maybe make rhubarb custard pie next time.😊

I have made custard pies for years. I use cold half and half and 5 eggs for 10 inch deep dish pie pan. . I also use nutmeg and vanilla . All your meals look good.
