For anyone who wants to do this but doesn’t have access to this kind of cut, you can get a London broil, a bottom round steak, an eye of round steak, and a sirloin tip steak and cook them all together like this. Those are all the smaller cuts in this behemoth

It's called a cave man steak and there very tough because they are all roasting joints not steaks anyone who tells you there nice and tender are lying the only way it will not be tough is to roast it and cut it thin

I guess this is a slice of leg, just like ossobuco. Normally, this is regarded stew or soup meat and has to be cooked very long, depending on the size of the slice. Great idea to turn this into something grilleable 😊 The inner contents of the bone is of distinct flavour, goes very well in beef broth with a little nutmeg added... Yum...
