It my not be my place to say this, but if you cannot see the tutorial in this video then you need to practice with Edit Poly more and watch it again. This tutorial is the complete workflow in the best manner possible, NOT BORING !!! (sorry I do not mean to shout, just to point out).

yes you have to capture the screen with the software, likes nvidia shadowplay (if you use nvidia graphics card) camtastudio, bandicam , etc

How do I deal with faces that are not planar? ist seems impossible to get them planar or should I ignore it? My faces seem divided into tris becaus the Vertices Arent enough

Try to use Modo instead of Max. Faster, cheaper, more usefull and comfortable for direct modeling like this one

This is so complete bullshit. Noone ever models a car like that. How do you happen to end up with the correct width, height, distances of the axis and other measurements? where are your helplines, guides and rough volume for testing before going all into details etc. Cmon man this is just an animation based on the full model that was made first before reverse playing the making process.
