In the Episode Merlin spoke about her true Identity as the daughter of a high ranking Demon(don't know much about this) and since Meliodas is also a Demon, they would of course know each other for a long time. So it would make sense that she would know about Meliodas' curse if he were to die and be resurrected in the human world where Merlin also lived for over the past 3000 years
