In high school I worked at a pizza place and the owner was very deliberate about everything being made fresh every morning (as in he had two dedicated morning prep cooks who did nothing but make and roll dough). There was a lot of lost food but the quality meant that customers came back and that more than made up for it. I always volunteered for closing shifts because at the end of the night employees were allowed to take the left over shells and make a pizza to take home. I actually got the chance to eat at Zeke's a few months after I saw the episode. I specifically got the oysters Rockefeller, and they were fantastic, as was everything else I got. The decor was REALLY cool in person as well. However, most of the lights were off, despite being very much open and in the middle of operating hours. The staff seemed absolutely downtrodden. I even had one of the waitresses featured in the episode, the one with short dark hair. She looked pissed and put upon. The staff seemed to try to perk up when interacting with my friend and I, but between their general attitude and the lights being off, I think the owners were making their lives hell. And yeah, with an atmosphere like that, you can have great food but it will STILL be overpriced for the overall experience. Maybe Luca's is better because the owners learned to not treat their staff badly, or they stepped back or something. Really unfortunate Zeke's went down.

There's a difference between preparing something to be frozen and served later vs preparing something to be served that day and then when it doesn't get used that day, freezing it and reheating it on a different day. The second option, that is something a household does with their leftovers, not a restaurant. They sound so stingy. They should be feeding the employees. And if there is so much leftover that they think they can freeze it and resell, there is something wrong with their management. Make less food that doesn't sell that day and give more to the employees!
