ye...i mean a lot of uss dont have farmers markets or such to buy good stuff to cook with..and sure ,cooking yourself rather then microwaving makes a difference , even with store bought 'fresh' stuff. but if you want something to become a brand to start make..worse.. XD more crappy 'fast food' versions of.. you have to start with the quality to get a rep... you cant just take prefab shit , slap it on pre fab shit , and then stick it in a microwave....and expect it to even come close to say... a wood fired alternative with some home made dow.

He refused to let go of the menu because that was really the only thing in the restaurant that was actually him. His wife was taking care of bills, Lou was doing most of the cooking, and his food was coming out of factories anyway. The menu was his only input. His ego couldn’t take having that one contribution of his being thrown away.

I got the feeling that he was more interested in the franchise idea than the food. If it worked for Ronald McDonald, it'd work for Sebastian. Problem is he needed to come up with a Sebastian's package which could be sold to gullible franchisees. So he got hung up on the 'unique' menu system which he probably thought could become his IP. He could then sell franchises, collect royalties and become the great movie director he deserved to be.. Otherwise it's just another pizza joint with a pick & mix option, so nothing that could be turned into the next billion dollar franchise operation. Any potential investor would want to look at a number of already successful Sebastians, the books and the business plan.. None of which he had. Perhaps he'll have more luck franchising his landscaping business.

BTW, I actually figured out how the "23 flavour combinations" works. It literally just means that he prepares basically the same meal for everyone, and all they're choosing is the type of meat, and what sauce it's marinaded in. That's literally it. That's the hill he was so desperate to die on. On one hand, it makes sense that he thought it could be franchisable. It seems like a very fast food idea, "mix-and-match your meat and seasoning, but with the same reliable sides", and I could see it catching on if someone made a trashy, drive-through equivalent, or indeed frozen instant meals. The problem is, he also wanted it to come off as "fine dining" because he's a pompous ass who also want to be seen as a culinary genius as opposed to just an entrepreneur, so in order to mask how commercial and simple the idea was, he had to come up with the pretentious "flavourful combinations" to make it seem refined, which confused people who probably otherwise would have found some novelty/appeal in the concept.

Here's the thing I've always thought with Sebastian's- I've actually seen other pizza places pull off the multiple choice thing before. It's not that unique. If they actually had good pizzas, they might have been able to make it work with a much more simplified version of that menu- pick a sauce, pick a veg, pick a protein from four or five options each, rather than miles and miles of menu. It's just the pizza's not worth it in the first place due to quality.

Also plenty of restaurants I've been too let you add stuff to burgers for an extra charge, even a slice of pineapple in one. I've seen this "mix and match" of protein/sauce/carbs at Asian noodle chains but they're a lot less complicated and generally have less options than whatever this is. There's no reason you couldn't do something similar with Western-style food but you have to keep it simple.

The series execs seemed to want happy endings for every restaurant so your hunch makes sense. Yet majority of businesses in show closed, lot of them even before episodes aired. What I don't understand about reality series about businesses/restaurants is their insistence on having a happy ending when it's very obvious that some of places are simply doomed to failure due to finances or bad management.

He tries to be an actor, opens restaurant in Hollywood, tries to make the most unique menu concept he can and wants to franchise it. Seems all he does is a hope for fame. Theres a very nice italian place near my house that has a similar menu for pasta Pick your noodle, pick your sauce, pick a protien. Not that original or strange, you just cant have too many options or it gets confusing. However, if you talk to the waiters, they'll tell you some combinations are much better than others, which makes sense, something a professional put together is gonna be better mostly than something you picked blindly. But they have really good food, so i guess theycan survive this issue

Having a place named after a person is a great touch, but I’m super sus over any place named after the current owner and/or chef. Normally they don’t care about the blood and sweat it takes to be big, they just want to see their name in marquee. Sebastian is one of the worst for it... he’s just fantasizing over seeing his name everywhere, but there’s zero interest in what his name will actually represent. It’s like idolizing Chef Boyardee... on a side, oh god, I can't begin to imagine what "unique" pitch he brought to landscaping. It's a classic mistake for failing restaurants to let the quality of the food drop. They are trying to save money because they aren't doing well financially. But lowering the quality of the food, even if it's to save money, is the last thing you should do, because that guarantees that the financial situation is never going to get better. This might come as a surprise to some people, but at the end of the day people go to restaurants for the food. And if the food is bad then not only are your customers not going to come back, but they'll also warn others against going to your place. Lowering the quality of your food when your restaurant is struggling is like trying to get yourself out of a hole by digging it deeper.

Then again that goes for a lot of these people because I swear some are like, actual clinical Narcissists or something, even if they are cut to look worse. I’m Autistic so it knows how it feels like to get hung up on petty BS and not be self-aware, so really I’m probably one of the few who _kind of_ empathize with him (like the multiple choice menu legit seems like something I’d definitely come up with and insist on when I was 12, and if I was raised by more ignorant people I’d definitely still be acting like that), but if you called someone in to get criticism, you can’t be shocked that you get criticism; and I’m sorry, people have no obligation to put up with you being bad at your job if you signed up for this job, and the less food wasted the better. And like, selling fresh food only makes sense. At least follow that advice, my dude.

First time I ordered at subway I was confused by all the choices. Like I had to pick bread and size, then the menu item and then vegetables on top of that and I think sauce too. Way more complicated than this. At mcdonalds you can also choose although it is not always advertised. You can just order a regular menu, but if you want you can exchange the fries and drink for other options.

I have seen almost all of Hell's Kitchen and seen all of the Kitchen Nightmares and that part where Gordon tells Sebastian that he never met someone he believes in less and that shoulder tap with the ironic "good luck" hurt even me as a viewer. The disappointed dad energy was off the charts.

Sebastian is one of the strangest owners ever on this show. He was so attatched to his shitty menu “concept” and just could not get away from it even after being told repeatedly by a world renowned chef that it was shit. Even him seemingly having plans to take his restaurant and menu global and open franchises all over the world when he couldn’t even get it right with one restaurant let alone hundreds Honestly one of the strangest owners ever on this show, it didn’t even seem to be arrogance I think it was just a combination of being completely delusional and utterly incompetent while poccessing a severe lack of knowledge

So, by 'Gourmet Flavor Combinations' what Sebastian really meant was 'toppings' then. Pick your own toppings? Yeah, sorry dude, that's not a USP. Every pizza place that's ever existed basically already did that. They just didn't bother separating the toppings into their own separate menu and slapping the word 'gourmet' all over the place, probably because they figured that would be confusing as fuck.

Sebastion always struck me as nothing more than a spoiled manchild. I found it clear that he was used to whatever decisions he made being received positively or having other tell him that anyone who didn't agree with him was wrong. Especially when he did nothing but scream at Gordon then run away

Weird thing is I can kinda understand why Sebastian is the way he is and responds the way he does. He wants to be famous, not for something specific but for anything, he’s tried multiple avenues he’s tried acting, he’s tried running a fine dining restaurant near the big studios so he can hobnob with the big name stars, he’s tried being the unique concept menu guy and he wants to try running a frozen pizza empire. When Gordon got rid of the menu he inadvertently destroyed one of his plans which is why Sebastian gets so defensive and looks like he’s witnessing The D-Day Landings during relaunch night, probably also why he starts screaming “THIS IS MY FUCKING LIFE!!!!” in his mind Gordon wasn’t just changing a restaurant, he was ripping a chance for him to be famous from him and ruining his life

7:53 sounds like the type of excuse some writers and fans of a poorly conceived character use, like "Well, this character is meant to be an unlikable bully so if you absolutely hate their guts and it ruins the whole story for you, then it succeeded!" NO. There's an art, a balancing act in making an unlikable character or antiheroes, but still make them engaging and entertaining to watch. Think of Mr. Burns, Biff Tannen, Bender from Futurama or hell, Always Sunny in Philadelphia and Wolf of Wall Street. Likewise, having an unique menu should be a good thing ONLY if it's actually good, Gordon is appalled because it's fucking stupid and the results of this 'unique' idea are AWFUL. "Hey look, I got F in everything and I am going to repeat the year... why? I was unique, the teacher sees that themselves, so why am I not being praised for that??"
