More info (4 years late I know) Giles would not plead because, if he plead innocent, he would have been hung after a trial, and he new it. If he plead guilty, they would have allowed him to live, but taken his land and everything he owned and shame him for life from being associated with the devil (witchcraft) So in order to save his land he would not plead.
