METHI MATAR MALAI RECIPE
Here's a recipe for Methi Matar Malai, a flavorful dish with fenugreek leaves, green peas, and a creamy sauce:
Ingredients:
2 medium onion chopped
2-2½ cups fresh fenugreek leaves (50 grams)
1 tablespoon corriander powder
1-2 green chilies, chopped (adjust to your spice preference)
1 inch ginger, chopped
4 cloves garlic chopped
1 teaspoon cumin seeds
¼ teaspoon fennel seeds
2-3 cloves
2 green cardamoms
¼ cup cashews
1 tablespoon poppy seeds (optional)
1 teaspoon coriander powder
½ teaspoon garam masala
Salt to taste
1 cup green peas (fresh or frozen)
½ cup water
½ cup heavy cream or fresh cream
Cilantro (fresh coriander leaves), chopped (for garnish)
Instructions :
:
Rinse the fenugreek leaves thoroughly in several changes of water. Pick and discard any tough stems.
Heat oil in a pan over medium heat. Add cumin seeds, fennel seeds, cloves, and cardamoms. Let them splutter for a few seconds.
Add chopped onion and green chilies. Saute until the onions become soft and translucent, about 5-6 minutes.
Add ginger and cashews (and poppy seeds, if using). Cook for another minute.
Turn off the heat and let the mixture cool slightly. Grind the mixture into a smooth paste with a little water.
In the same pan, heat butter (or oil) over medium heat. Add theprepared onion-cashew paste and water. Mix well and bring to a gentle boil.
Reduce heat, cover the pan, and simmer for 5 minutes, or until the peas are cooked and the gravy thickens.
Stir in heavy cream or fresh cream. Gently heat for a minute or two, without boiling.
Taste and adjust salt or add more green chilies for extra spice (optional).
Garnish with chopped cilantro and serve hot with roti, naan, or rice.
Tips:
You can blanch the fenugreek leaves for a few seconds in boiling water before adding them to the pan if you prefer a milder flavor.
For a richer gravy, you can add a tablespoon of cashew paste or almond paste along with the onion-cashew paste.
Adjust the amount of water depending on the desired gravy consistency.
You can substitute fresh fenugreek leaves with 1/4 cup dried fenugreek leaves, soaked in warm water for 30 minutes before using.
