I can't try her tamales unfortunately so I can't have an opinion on it, but there is this one tamale vendor a couple of blocks from my house that sells the most softest and tastiest tamales ever! Especially the ones con salsa verde, the salsa is very creamy and smooth and spicy as hell, combined with the softness of the masa, it makes for a bomb ass tamale! I always prefer to buy my tamales from him!

Rajas tamales or the tamales red head lady made are not typically done with a lot of dough. Also in the south people don’t put a lot of dough either. Especially tamales en hoja de plátano.

I always think about how different our tamales are. I'm norteña and I've been eating thin, thick and greasy tamales my whole life! We don't put carrots in them! But, when I visited my friends in Mazatlán, their tamales were way too different, even in Toluca and CDMX where they are so big and fluffy. There's so much diversity about just one dish and I think their judgement were based just in their personal experiences, especially Maria and her rajas con chile, I mean, I told my mom and she was like "Who puts carrots if it's a rajas con chile tamale???", But yeah, you get my point
