Most of Mexicans don't eat any insects. 10:24 you can see the signs are in English, nobody selling to locals could do that, that stand sells to Gringos basically. 11:23 Madagascar hissing cockroach (Gromphadorhina portentosa) are Not natives to North America (Mexico).
