Dear Cocina, I just made this recipe for the family tonight. The Picadillo was a hit and will become one of our standard rotation dishes. The leftovers will go with an over easy egg tomorrow morning very nicely. Thank you for your videos and recipes, we here all appreciate your hard work.

My mom used to, in the '60s, have me go out with my rifle and get a couple of rabbits, skin them, clean them and take them to her. She would make a nice red sauce with guajillo and pasilla. Picadillo was always ground beef. Yum!

I basically make a green chile stew with beef instead of pork. I dunno if you call it the same. I use a can of tomato puree, onion, green chiles, potato's, and the spices. Last time I threw in some French cut green beans. I also use beef broth to make it more soupy. I am having trouble with it being spicy enough. My only source of green chiles is walmart fresh or fresh frozen. I wouldn't mind throwing in jalapeno or any other pepper but I keep getting those not hot enough. I throw them in near the end of cooking but still, not hot enough. I heard the tomato's in the mix kill the heat.

I gotta know, does roasting the salsa ingredients get the tomatoes tender the same as boiling them? In your older video for tamales verdes you boiled everything for the salsa instead. Is roasting faster?
