Voy a decir esto en inglés : My girlfriend (basically my wife now) is from Guam. Over there, they have a similar chicken recipe but it's 7up soda, pineapple juice, achiote, soy sauce, vinegar and salt/pepper. Marinate for 1-2-3 days. Damn good. This reminds me of that. I'm mexican and she's Filipina. The similarities in our cultures always surprise me even though I've been with her for almost 10 years now. Damn I should wife her up hahah

20 bucks for one chicken where I live in the inland empire, much better than el pollo loco and Juan pollo. Best Mexican chicken I've eaten. I'm lucky if i see him cooking at the street corner he usually sells 🤣😂.

I spent 3 years all over Mexico. I never really saw chicken in popularity as I do stateside if that makes sense. Chicken was not “uncommon” just the majority of what I ate was pork, beef, fish, seafood, chorizo, linguine, eggs, hot dogs, corn, goat 👍, THEN chicken. If the charcoal grill was fired it was beef or pork, I never saw chicken. Return stateside and I’m chicken at KFC, Chik fil a, McDonalds, Zaxby’s, chicken pot pie, fried chicken, BBQ chicken, grilled chicken, chicken cordon blu, chicken salad, tenders, nuggets. Maybe I need to get out more, but I visited mountain villages that were MILES from a store and had never seen a blue eyed gringo speaking a dialect of Spanish I needed a special interpreter for 😀

Another reason I bring this up that surprised me was the cost of a chicken and space and resources versus a cow or pig. Maybe Mexicans value the continuous eggs versus the effort for the meat.
