Every restaurant has filthy oil. The oil is used over and over again an there just are not enough fry compartments to dedicate to one specifics. Every is going to be fried in the oil. It take a long time for oil to go bad, and the worst type of oils are longer lasting than the good but expensive oils. Very very few restaurants change their oil on a daily basis as nothing survives boiling oil and most times one can only tell the oil is really old is when the fried items are very dark. Deep fry oil are good at masking taste and smell of old oil while pan fried oil do not have that luxury.

I ordered that burrito recently and 4 of us had severe food poisoning. Hospital doctor said it was cross contamination of raw pork and other bacterias from this place. "Most famous" isn't anything near the Strip when you talk to a local. Generally it's good but overhyped due to social media if it's near the Strip. The best are usually the places in the middle of a town far outside the strip, sometimes in a place you might not feel safe, and the food is cooked by an 85 year old abuela and her daughter for the last 30+ years. You can likely to this day get a plate full of food that would feed 3 people for under $10 with a drink.
