Tuna stands out among the more than 200 marine species of commercial importance in Mexico, since with a production of more than 100 thousand tons per year it is positioned in fourth place nationally in volume and second in value of national fishing production; It is also the 11th tuna processing country in the world. The capture method used by the Mexican tuna fleet is regulated by the Agreement on the International Dolphin Conservation Program and adheres to the IATTC regulations as the most sustainable. Due to its high protein and caloric level and because it has vitamins such as the B complex, this fish is a food of high nutritional value, which is why its consumption is recommended at various stages of human growth, especially during pregnancy and childhood, since it contributes to the neurocerebral strengthening of infants.
