Hard to keep it temp low on stick burn if we need both dampers open seems.

Ryan Ludwig if you use less wood or smaller sizes then it’s not a problem. You can start to shut the damper a down to lower temps but once you do you will allow more smoke. Some people like more smoke while others want very clean smoke. There’s always a happy medium. But if you are worried about temps when burning logs, just throw in a single stick at a time.

Question....on the M1...do you have any idea with a full load of charcoal and using something like Flame Boss set at 225, how long can you get out of a load???

Love these grills and smokers. Idea for my needs and for the small area I have to use the smoker. But it’s just not idea for my budget. But a wonderful product. Maybe I can find one used and own one.

I really like the MOAG. I'm saving up my shekels. LOLS There is one thing that I've been looking for in a grill. Is there a post or hanger of some sort that can hang (multiple) meat or poultry over the searing box? When I was young, my family used to get Chinese style roast pork, chicken or duck from the Chinese BBQ shops or markets. The main feature was having rendered fat dripping on the coals. The resulting flames and smoke added a distinct flavor onto the meat that is amazing!

It seems to me if that top shelve could move front to back you could cook “Santa Maria” style with open wood flame and just adjust the lower charcoal/wood grate box to the right height to control temperatures.

No gears or cables. Just a simple threaded stainless steel crank with a machined brass nutt that pushes a metal plate. Its extremely simple and very well built.

Are the fire boxes the same size on the M1 and M36. Or is the M36 larger?

The firebox baskets are the same size. But the firebox itself is larger and more insulated. We are working on a new replacement firebox basket that will allow a deeper amount of charcoal for even longer burn times!

Does the M1 have a removable baffle tuning plate for heat air flow?

No it does not. There is nothing to remove or put in place for grilling and smoking. The baffle is already in place and tuned to perfection.

Yes it does. There is a stainless baffle cover plate that can be removed to allow more heat into the cooking area. This will allow higher baking temperatures into the cooking area while using the same amount of fuel in the firebox. This plate also keeps ash from falling into the baffle opening when charcoal grilling.

Great video! Didn't think the M36 had a bigger firebox than the M1 but now that it does.... Hmmm.... My M1 needs a big brother!! Do you have a port/hole for probes or on the new gen do you just let them fall between the lid and base?

Ben Schlimme it’s actually the same size firebox basket as the M1. The gasket is thick enough to allow you to place probe wires throughout the lid of the cooker.

Why do Grill makers never show the construction of their grate adjustment mechanisms? Is it a Rack and pinion system or a cable system?

Ours works by simply cranking in our 1/2" stainless hand crank which hits a steel welded plate on a solid 5/8" stainless steel round bar. The round bar has steel "arms" attached to it. That bar then rotates up or down which lifts or lowers the arms. It's a very simple mechanism and we use thick, solid, and sturdy materials to drive our mechanism.

You should put the wood in the ash catch area so the embers hit the wood and you can get a nice clean smoke. I bet it would take less wood as well.

This style of draft is called "Reverse Airflow". The heat from the firebox travels under a 'baffle' and enters the cooking area on the far opposite side. The stack being on the same side as the firebox allows the heat to pass back over the food which allows far stable even temperates over the cooking surface than a traditional offset smoker.

Be careful using wood. The paint on my unit peeled right off the side. Not happy. This never happened with my $80 weber no matter how hot it got.

If the paint peeled off while using wood, you might have got the firebox way too hot by using too much wood or too large of wood. When you were using wood, how hot was your temperature gauge reading located on the lid?
