Embodiment is not incarnation. As far as *how*... Well, I'm not certain there are limitations preventing an omnipotent entity from manifesting however they please. And what better form to communicate with a person than appearing as a person. I've heard it explained as follows: The incarnation is the man known as Jesus. The embodiment seen in the OT is "the Son" of the godhead, prior to assuming His identity as Jesus the messiah as a result of the incarnation.
