You have to buy the best of everything? what a load of rubbish. These days we're taught to cook cheaper cuts of meat not the most expensive. Anyone can make a meal from the best ingredients.It takes talent to take cheap cuts of meat and turn them into something delicious.

Your interpretation of what chef was saying is not correct his focus on quality also applied to cheaper cuts, he uses the words best and quality, meaning freshness, care in production and presentation, chef has in his collection of recipes many dedicated to cheeped cuts. Quality,freshness and care applies to everything
