That looks amazing. On your way back home, check out the salt and malt in Chew Valley. Mstar chef Josh Eggleston is part owner, and you won't find a better haddock and chips with garden peas and tartar sauce anywhere. Sat on the bank of the reservoir eating out of a box which has no grease marks when you've finished it. Heaven

I really appreciate the expertise, the technique, the knowledge but honestly I'd prefer a nice piece of haddock, some great chips and a few condiments. I don't understand how the lobster isn't overcooked but that I guess is down to my ignorance. Much rarther have that tail steamed on the side of a nice steak with some butter and sprinkle of paprika.

I would say that the lobster was "half-cooked" in water, and the batter create a protection around it, protecting it against the oil and sealing the moisture inside. Steaming lobster is not the best, since it will evaporate part of it's juices, making it less juicy and more tough. Also, the water you boiled them in can be used as a base for crustacean broth, really fragrant.

@@silverchoweez think you're on to something there. Probably a few mins off cooked then fried, I'm sure they're nice, just not for me. Sure you could do many things with it, a bisque is a great idea. I like the slight firmness you get from steaming but hey thats just me🤷♂️
