Great food at MICKLETHWAIT Craft Meats in Austin, Texas the Meat Porn capital of the world during our Spring Break BBQ Road Trip. I had an amazing day talking with Ren and Hayley at MCM in Austin. Brisket, Barbacoa, Dino Beef Ribs, Spare Ribs, Chicken, and Sausage along with some excellent sides including Lemon Poppyseed Slaw, Smoked Mac N Cheese, Beans, and Cheesy Jalapeno Grits made for an amazing dining experience. Some of the greatest food in the world is coming out of this small trailer on Rosewood in Austin, Texas. The artistry of what is being done here is amazing. The Texas BBQ Capital doesn't disappoint and this is one of the many small businesses that use amazing cooking techniques along with secret recipes to bring you an amazing BBQ experience. They've got a big offset smoker that's custom built on a trailer. It is huge but not out of the ordinary for smokers at most BBQ JOINTS nowadays. If you get a chance to try them you should go get some of their food. Great stuff!
