Next project for you guys is kefir. Saccharomyces cerevisiae from Pasteur's brewing fungi and other types of Lactobacilli would be a nice topic to continue with.

if you're on a budget, you can make your own indefinitely from one store bought yogurt. There are Yogurt makers, but using summer heat or a heater works fine, just watch that it's in the right temperature range

Any tips for giving it a better flavor? I've failed miserably trying to give it a vanilla flavor. It's always tart.

@@noneyabidness7226 if it's too tart it's probably about timing and it's been warm too long. try different times or temperature. put it in the fridge as soon as it's not liquid anymore (tilt slightly and see if it's set) if there's whey (a sign that it's been too long) you can remove that to get rid of some sourness. and add flavors only right before consumption is best I think.

@@noneyabidness7226 Pria Pulida is right, the tartness is due to the build up of the lactic acid, the longer you let it ferment (at a fixed temp) the sourer it will get. Warmer temps will also make the fermentation go faster, it takes a bit of experimentation to get it just the way you like it, and of course without a good way to control the temperature it will come down to knowing when to cool it down based on the consistency rather than time.

Actually very few of the store-bought yoghurts have the lactobacillicus bulgaricus. So any "yoghurt" you'd make is just some fermented milk and not yoghurt.

7:10 Mechnikov was not just "satisfied" with yoghurt. In his 1911 book "Молочные микробы и польза, приносимая ими здоровью : (Ягуртъ)" he described his experience of treating paratyphoid with yoghurt along many other inspiring examples of yoghurt's benefits. (actually, this book must have had a French origin, but I haven't found one)

yogurt and cheese are absolutely different, yogurt (kiselo mlyako) has sour taste, cheese ( sirene ) has neutral taste.

I love your channel, Journey to the Microcosmos!! In my opinion, streptococcus thermophilus and lactobacillus bulgaricus have the best relationship with each other ! Thanks to them, I can enjoy my daily bedtime yogurt snack every day !!

Just got a microscope myself, tried looking at some store brand yogurt and... lol... the yogurt you guys used for this video is very active and looks much healthier than what I found. At 7:35 you see hundreds of the spherical bacteria, I was lucky to find four or five at any given time!

A lot of human foods were born as benefitial results of our ancestors "throwing everything to the wall" and see what sticked, lolz. Cheese has to be ome of the greatest results we have made in terms of food creation.

"They carried milk in bags made from animals." I was so ready for the next sentence to explain that the animals themselves were the 'container' for the milk, that they'd travel with the live animals as an easy way to preserve the milk.

This story is on its surface is interesting to say the least but viewing yogurt bacteria under the microscope, is uneventful and uninspiring. Let us not forget that James is truly a master of microscopes.

I've seen yogurt under a microscope. It looked just as 'uninteresting' as this footage. This isn't a diss, I'm glad to know i didn't do anything wrong and also glad to learn the science

For some strange reason, my belly doesn't seem to tolerate youghurt very well. I get bloated and it hurts. Regular milk? Just fine and dandy

I illiterately have a yogurt sample on a slide on my desk... The images I've got with my microscope was as deceiving as the ones in this video. Don't try this at home... it's just not worth it. I better stick to my garden soil or pound water testing.
