I make with semolina and a little rice flour with eno. Also I use plastic microwave tray!

This is khaman and not dhokla. Kindly correct this. Dhokla is a mixture of lentils and rice soacked in water and grind and fermented overnight. And then steamed. Khaman is what you have made. When you represent a particular cuisine, kindly give justice to it.

Baking Powder; it has to have both the bicarbonate and an acid!

@@hinajavaid3245 This is the actual right answer; I read a brief description and think that baking powder might work as, like ENO, it has both an acid and a fizzing agent that reacts with it, like sodium bicarbonate (AKA baking soda); and baking powder is similar, but not the same.

doesn’t cook evenly in microwave, I have tried this many times, there are always hard parts and uncooked parts. Unfortunately.
