Same thoughts here. I'm half-Russian, and they love their crawfish (cooked with nothing but salt and dill). By the way, really suggest trying it out, with a beer. Then you can taste the actual flavour of crawfish. Louisiana recepies drown it all out with spices.

Learned a lot from my Cajsian neighbors that got transplanted from N.O. after Katrina. Mr. Nguyen cooked all kinds of stuff in his boil. Asparagus, broccoli, artichokes and cauliflower were some of the things that I can remember and the new spices and sauces that the CajunAsian brought to the game.
