Enjoy Midsommar in Sweden with me with homemade elderberry cake.
Vegan Elderflower Cake:
• 200 g spelt flour
• 150 g powdered sugar or xylitol
• 8 g baking powder
• 240 ml water
• 100 ml rapeseed oil (canola oil)
• 1 cm fresh ginger
• 1 handful lemon balm
• 1 organic lemon
• 5 elderflower heads
Grease a loaf tin.
Peel the ginger. Finely chop the lemon balm and ginger. Mix the lemon juice with the lemon balm and ginger. Leave to infuse for 20 minutes. Grate the elderflowers and mix with the grated lemon zest.
Mix the flour, sugar and baking powder with the water and rapeseed oil in a bowl.
Also mix in the lemon balm mixture. Finally, fold in the elderflowers. Alternatively, you can also use 4 tbsp elderflower syrup and less sugar.
Pour the batter into the tin and bake the cake for approx. 35-40 minutes. Leave to cool in the tin, then turn out, sprinkle with powdered sugar and decorate with a few elderflowers and lemon zest.
