Chef Seamus Mullen and business partner Yann DeRochefort took Manhattan by storm with Boqueria, Seamus's Spanish Inspired Tapas Bar and Restaurant. Seamus now has multiple Manhattan Boqueria locations.
They also ran SUBA together, a lovely mostly subterranean Spanish spot on Ludlow just north of Houston St. years before that stretch of the LES would blossom as a thriving restaurant, live music and bar destination. It was way ahead of its time.

I'd watch this years ago as an inspired sous and even after changing careers, this man is on point, style flavor speech technique and ideology of what it truly means to be a modern chef. Not just NY but across the country. Hope he is well today.
