An important point is that all gases deviate to some extent from ideal gas behavior - so, an ideal gas is a theoretical thing. This video very nicely highlights where that deviation is greatest, that is where PV=nRT is going to be farthest from giving the correct answer.

it does not. When PV/RT increases or decreases that doesn't mean that the amount of gas is changing, it just means that the pressure (for example) is higher or lower for a real gas than what was predicted by the ideal gas equation so it changes the whole fraction. If it was an ideal gas that ratio of PV/RT would always be equal to one because there are no outside factors (such as volume of particles or intermolecular forces) like in real gases

Correct - if no gas is added to or released from the container then n (amount in mol) will be constant.
