😋 Whipped vanilla ganache
200 ml cream (1 part fat content not less than 30%) (6.7 fl.oz)
200 g white chocolate (7 oz)
200 ml cream (2 part, fat content not less than 30%) (6.7 fl.oz)
vanilla pod
30 g glucose syrup or honey (1 oz)
😋 Make whipped vanilla ganache.
1. Heat the cream (1 part) until steaming.
2. Combine cream with glucose syrup and vanilla caviar.
3. Add chocolate to the cream, stir.
4. Add cream (2 parts) and blend with a hand blender until smooth.
5. Cover with plastic wrap and refrigerate for at least 12 hours to stabilize.
6. Whisk the ganache until firm peaks.
Biscuit:
370 g condensed milk (13 oz)
100 g butter (fat content not less than 82%) (3.5 oz)
100 g eggs (3.5 oz)
30 g protein (1 oz)
10 g baking powder (0.3 oz)
200 g flour (7 oz)
🍰 Make a biscuit.
1. Melt the butter.
2. Send condensed milk, eggs, protein and butter to the bowl of the food processor, mix.
3. Combine the flour with baking powder, add to the bowl of the food processor and stir until smooth.
🍰Bake the cakes.
1. Turn on the oven at 180 ° C, with convection.
2. Cut out circles with a diameter of 19-20 cm (7.8 inch) from the parchment (1 cm larger than the diameter of the cake).
3. Place the circles of parchment over the dough, then flip onto a baking sheet and flatten the dough on the parchment.
4. Send the cakes to bake for 5-6 minutes in an oven preheated to 180 ° C (356 °F)

😋 Prepare the cream.
1. Send milk to a saucepan, mix sugar with cornstarch and add to milk.
2. Bring the milk to a boil with constant stirring and let it simmer for 1 minute.
3. Add cubes of butter, stir.
4. Transfer the cream to a bowl, cover with foil in contact, refrigerate for 1-1.5 hours.
5. Send the cream, mascarpone to the bowl of the food processor, beat until soft peaks.
6. Combine the milk base with the cream and mascarpone and stir.
🍨Vanilla milk (for impregnation):
200 ml milk
vanilla (vanilla sugar)
🍨Make vanilla milk.
Heat the vanilla milk. Refrigerate.
🍰Collect the cake.
1. Cut the cakes to the diameter of the mold (18 cm - 7 inch).
2. Place in a mold, alternating: a biscuit, soaked in a mixture of milk and vanilla, cream, then again a biscuit, impregnation, cream, etc.
3. Send the cake to the refrigerator for 2-3 hours.
4. Remove the mold from the cake.
5. Transfer the whipped ganache to an 8 cm diameter Closed Star piping bag.
6. Decorate the cake.
