Behruz was porbably my favorite guide yet. He seems to understand the nuances of Sonny's jokes, and reacts appropriately. One of the hardest things when learning a new language is being able to comprehend the subtlety of word play (like sarcasm or hyperbole), and he seems to always understand when jokes are made, and reacts accordingly (i.e. laughs or retorts back).

i was going to say the same. Most local hosts can not interact with Sonny on a high humor level due to advanced word play, which is totally normal. Behruz looks way more local than most co-hosts but his level of interaction is the highest i have seen so far. Pretty fun guy, recognizes humor and puns, even pop culture references.

That ball of dough is genius: by washing it in the milk, he’s separating the starch from the gluten. That way the milk gets thickened with the starch but not tough because of gluten. And you have seitan on the side if you want too!

Was thinking the same thing. I learned this technique as a kid when you want to bake a dough that needs extra gluten, amazing that they do the same technique for the opposite reason.

One thing I'm realizing is that when I see some of the more unusual foods(like the milk filled lungs) in these countries, many of them are not as commonly eaten by the whole population as I may think. I often hear guides saying "some people here eat it but I don't ". This was very fascinating to watch.

food is one of those areas which is still very stereotyped, people assume (especially in the west) that because people are from a certain culture they must enjoy whatever strange traditional dish they've seen come up on their social media. everyone has a highly-judges dish that they enjoy, but its strange that a lot of people judge food based off look alone when the only thing that matters is if you enjoy the taste, so more ppl should be like this guy n willing to go into whatever restaurant and have a go, even if they don't end up enjoying it

In italian culture sausage "salsiccia" is very present and I can say that those sausages are very similar to ours but at the same time very unique. The seasoning, the cooking method. Even if I've never tasted them I can imagine and say that they are delicious. I can't compare because ours are simpler in seasonings and method of cooking but you know, our sausages can get your taste tired if you eat to much but seems that you can binge this more complicated version without being tired.

The lungs are fascinating. We used to eat them when I was a kid, cut in smaller pieces, breaded and fried, and served in cream gravy, so the flavor here would be similar. I think these would be even better if those finished chunks were breaded and fried. Too bad they are illegal to sell in the States now, because I would surely make these.

@@Bunniculaable I'm not really sure. They have been for quite a few years. Maybe it has to do with a fear of potential residual bacteria in the avioli. As long as they are completely cooked it is no problem but we have so many issues with potential pathogens in U.S. beef, they probably just err on the side of hysterical precaution. We used to get cow brain too but that is no longer available because of the rare chance of contracting mad cow disease from an infected one, but the disease in cows has been almost completely eliminated since they discovered the main mechanism was feeding bovine bone meal and tissue back to cows in their feed, and they've stopped doing that. There have only been 26 total documented cases ever in North America of people contracting that disease from cows, so the chance is almost nil now. Just to be clear, I do not advocate for anyone eating brains, lungs, beef, wheat or anything else. Individuals need to be proactive in their own due diligence to determine the safety of the foods they eat and make their own decisions concerning the risks they are willing to take.

That lung reminded me of goose liver soaked in milk which I absolutely love. I could have eaten the whole plate with the milky lungs lol. It's so interesting to see what people eat in different countries. I was born in the USA but grew up in Hungary, and I always laugh when people say for example chicken feet or pigeon meat is disgusting (even in our neighbouring countries) but here in central Europe it's an everyday food, and even used to be my grandmas favourite dish :D

Sadly I agree that content may suffer...but its his lively hood. I suspect a network will pay a lot better....and he deserves it. Thats the point I was making. NOT that I want or would like changes. I love the show.

It seems in fergana valley region they use more spices, whereas in Tashkent and Samarkand they only use a couple like paprika, tumeric, and cumin, but let the natural flavors shine through

@@-jank-willson And yet, in the Ferghana Valley, sheep meat is much tastier than in other regions of Uzbekistan, because sheep of a breed called "Hisori" are grown in the valley. This is a breed of sheep without a tail and its meat does not have an unpleasant smell, I can’t describe the taste, you just need to try it. So I invite you to visit Uzbekistan and try the dishes yourself!!!

Ask your butcher to get you a lung and make it yourself. It looks pretty simple to make. Probably need to boil outside so it doesn’t smell up house though.

@@maywalker997 Boiling a large pot of any meat product all day long will generally smell up your whole house. Uncommon animal parts usually have an especially overpowering smell.
